🐭🥞 Mickey Fluffy Pancakes
Tall. Jiggly. Cloud-soft.
These Japanese-style soufflé pancakes are light as air and melt in your mouth. And the Mickey shape? Next-level cute.

🛒 Ingredients
• 2 egg yolks
• 3 egg whites
• 2 tbsp milk
• 1 tsp vanilla extract
• 2 tbsp sifted all-purpose flour
• 1 tsp baking powder
• 2 tbsp sugar
• Pinch of salt
• Few drops lemon juice (to stabilize egg whites)

🔥 How to Make Them
1. In a bowl, whisk egg yolks, milk, and vanilla.
2. Sift in flour + baking powder. Mix until smooth.
3. In a separate bowl, beat egg whites with lemon juice.
4. Gradually add sugar while beating until stiff, glossy peaks form.
5. Gently fold egg whites into yolk mixture in batches. Do NOT overmix.
6. Heat a nonstick pan on LOW and lightly grease.
7. Pipe or spoon batter into Mickey-shaped molds (or freehand circles).
8. Cover with lid and cook 4–5 minutes.
9. Carefully flip and cook another 3–4 minutes covered.
Low heat is key — they cook through slowly and stay fluffy.
