The most underrated best value steak is the Chuck Eye Steak. It begins where the Ribeye ends so it has all the flavor at half the price. Further up on the Ribeye, this would mostly be considered rib cap... Delicious!

TENDERNESS - Everybody always wants a nice tender piece of meat and there are reasons why one cut is more tender than the other. The less a muscle is used the more tender it's going to be. That's why the filet is the most tender cut because it's buried deep inside the steer and doesn't get used very much. On the other hand, you have the brisket which is known to be cooked "low and slow" to tenderize the meat. The brisket covers the rib cage and moves every time the steer breathes. Interestingly, the ribeye and the strip loin is one long muscle called the Longissimus Dorsi. In Latin, it translates to "longest muscle of the back". The ribeye section is located more towards the front of the steer, while the strip loin is located more towards the back. Every time the steers lays down and gets up it's using the muscles towards the back to do so. That's why the ribeye is more tender than the strip.

OPPORTUNITY AND ADVENTURE - Being in the Wholesale Meat Business gave me access to things that most people have no concept of. One day I thought to myself, how cool would it be to roast a whole lamb on a spit at The Meadowlands before a Jets game. (Not a Jets fan in spite of what I wore that day). I had an electric spit custom built to be able to support a 40 # lamb and made tailgating history.

EDUCATION - Going into the business as "The Bosses Son" gave me a badge of authority... but no creds. I wanted the men to respect me for my ability not for who I was, so I learned to be a butcher which earned me their respect and gave me invaluable knowledge in meat. In 2014 Mosner Family Brands started offering butcher classes to the public and even made New York Magazine's top 100 Holiday Gifts of the year. It was a great opportunity to impart our knowledge to those curious, and brave enough to come. After 30 years in the business, at that point, I really enjoyed sharing what I'd learned, and I still get a thrill when I can educate and teach people today.

KNOW THE DIFFERENCE - There's nothing Prime about the Golden Corral All You Can Eat Prime Rib for $9.99. The cut is called Prime Rib because it is the prime cut in the steer. The USDA grading of beef is a subjective analysis by a USDA Grader who might see thousands of pieces of meat a day. While there are standards by which to grade, he/she has just a few seconds to make a decision which can be predicated on how they feel at that moment. Aside from USDA Prime, Choice and Select there are also No Roll (ungraded) and Utility. Utility is the lowest grade and is most likely what you're getting for All You Can Eat for $9.99. That's why it's important to know what you're looking at when purchasing meat... or have someone like me procure it for you. There are levels within each grade. Just because something is labeled choice from one store doesn't mean it's the same as something labeled choice at another store. It's not just about the marbling that are characteristics to look at that help determine tenderness and an overall good dining experience.
