Chef Ken's Custom Meals- This gourmet meal delivery service was first introduced in the Tri-Valley as the pandemic began.

I pan fried these very thick bone in pork chops. Heavily seasoned due to their thickness, these were still tender and juicy after removing at 140 degrees.

As the "a la Carte" item on next week's menu we have these smoked baby back ribs seasoned with freshly ground pastrami spices. This item outsold all of the regular entrees for the week.

This is how I made catering fun. At one point years ago, I advertised my catering services for child birthday parties. After the first one I was swamped. For every party I interviewed the parents asking what the child liked-then proceeded to sculpt watermelons for their table centerpieces. Inside of the watermelon in fruit ambrosia-and they received an extra container of the salad. This feature was free to them.
One you can see was into soccer, so I made this soccer field. The grass is coconut, and the players have names on their backs of actual attendees.
Santiago was into airplanes, and one very young child was already obsessed with baseball.
If you look closely at the bottom right, you can see that I transported that one in my front seat with a seatbelt on. Didn't want to get a ticket.

It has been 10 years since I was making hundreds of various sliders per day at the restaurant. These ranged from chicken fajita, Andouille sausage, angus beef, pulled pork, Buffalo chicken, BLT, and several specials. These make it to my current menus from time to time.

As I do my menu homework for the upcoming holidays, I realized that this will be the first for the Brentwood/Oakley/Discovery Bay area.
I will offer some type of turkey dishes for Thanksgiving- just haven't decided what yet. Maybe another quick survey?
Over the years, these smoked ham offerings have been the most popular. These slow smoke over hickory for a few hours. This year I am going to baste them with a pineapple/mango glaze.
This whole ham is one of dozens that I smoked last year. In the second photo are ham trays that I assembled from the same hams. These were popular as many brought these trays to family gatherings as their contribution. Individual meals were also created with it.
