* 1 red bell pepper (strips)
* 2 cups small broccoli florets
* 1 cup cherry tomatoes (halved)
* 2 cups baby spinach
* ยฝ tsp Italian seasoning, salt & pepper, chili flakes (opt)
* ยฝ cup reserved pasta water
* Finish: lemon zest/juice, fresh basil or parsley, grated parmesan (opt)
* Protein options: 1 cup white beans or crispy tofu cubes
