Last night we got to attend an incredible farm-to-table dinner at Iola Valley Farm and share some of our cheese with the other guests. Folks enjoyed our Highland cheese while sipping some wine from Buckel Family Wine , the chef added our Goat’s Milk Feta to a lovely salad, and our Fromage Blanc ended up as a decadent frosting on freshly baked carrot cake. Floral stems grown by Jenna and arrangements by Alexis Taylor made the setting into a work of art. We also enjoyed loads of veggies grown right on the farm and steak raised by the farm owner.

We are so thankful to have been included in the magic of the evening ✨🌌 It was beautiful to witness the hard, gritty work of all the farmers and producers come together as a beautiful feast enjoyed by so many guests. Cheers to the good folks working in tandem to steward the land and feed the people.

New cheese alert 🚨 🌶️

Meet “Thistle Whistle Pepperjack”. Our classic Pepperjack recipe, this time made with Espilette and Beaverdam peppers grown by our friends at Thistlewhistlefarm in Hotchkiss, CO.

Greg and Amanda used to work at Thistle Whistle Farm- a beautiful and diverse operation located in the North Fork Valley. Mark and his team specialize in a variety of peppers and tomatoes amongst hundreds of other herbs, flowers, veggies, fruits, with some animals to boot. We are honored to feature some of his dried peppers in our Pepperjack this week!

Sold exclusively at in the Gunnison Valley at the Crested Butte Farmers Market and soon at the Gunnison Farmers Market , so keep your eyes peeled! You won’t want to miss this delicious special.

HAPPY BIRTHDAY BUCK & BLOOM 🥳

Celebrating one full year of Buck & Bloom Cheese Company. To celebrate, we cut into our oldest wheel to date! A Goat Ibores from August 2025. Salty, flakey, rich and nutty, it was divine.

What a year it’s been! Making thousands of pounds of cheese, attending farmers markets and events, raising goats from bottle babies, employing an incredible team through the seasons, making new relationships with independent farmers, staying steady while the whole farm was sold, expanding into new markets, working with a badass independent distributor, expanding the herd, and truly feeling supported by some of the best people on earth. You know who you are!

Huge thanks to the people in our lives who make this thing possible. Our cheesemakers, marketeers, haulers, farmers, landlords, reps, family and friends, and our amazing customers. Each of you has a role to play in making this small cheesemaking company a reality, and we can’t thank you enough.

Cheese spotlight: Cynara

This small, bloomy-rind cheese is a recipe created right here at Buck & Bloom’s creamery. We coat the tiny wheel of cheese in ash and flip it several times before sending it into the refrigerated aging space for 2 weeks. While it ages, Cynara develops a delicate bloom similar to Brie.

Most uniquely, we use enzymes extracted from the pistols of a cardoon flower (the purple stringy part pictured here!) to coagulate the cheese, separating the curds and whey.

People have been swooning over this cheese at our farmers markets! Cynara is particularly creamy and delicate with a flavor unlike any other.
