Watch your email for updates on future deliveries please!

Yeah, that happened. We had a fire yesterday morning. Not sure yet what caused it. The grass fed meats delivery business infrastructure and inventory on site is literally toast, very burnt toast. The other buildings, house and animals are all OK. The business stuff was all in one building and it burned to the ground. We are figuring out how to deliver the inventory that is currently off site and move forward. Will keep you all posted.

It's getting close to time for our next grass fed beef and pastured poultry and pork delivery to the Bull Valley (and surrounding) areas!

Come join us! Meet the farmer, meet some neighbors, get some great quality protein for your family at really good pricing.

Order and pay online by Tuesday, June 18 for delivery to Bull Valley on June 22 (usually around 2pm but we can be flexible if that time doesn't work for you!

I like cooking up boneless chicken breasts and thighs on the grill and keeping them in the fridge or freezer to pull out for a quick and delicious meal! This is a great, fresh, raw, healthy salad that looks gorgeous and tastes great with some shredded cooked thighs or breasts thrown in.

1 small head of red cabbage - shredded
2 green onions diced (green and white portions)
1 bunch of cilantro (leaves only) chopped
1 orange, peeled and cut into bite sized pieces
1 small cucumber, diced
1 or 2 carrots - shredded
1/2-1 yellow bell pepper, diced

Toss everything together with this lovely dressing:
1/4 cup rice vinegar
2 T organic tamari
2 T organic maple syrup
3 t toasted sesame oil
1-2 T almond butter (peanut or cashew can work too)
3 t grated ginger (see note below)

Add your shredded or diced cooked chicken and serve with some crusty bread or crackers! Delish!

(For easy-to-grate ginger that doesn't get moldy, freeze your ginger root in a ziplock bag. When you're ready to grate it, use a lemon zester with the frozen ginger (you don't even have to peel it if it's organic). It zests perfectly and makes this wonderful light bunch of ginger that blends beautifully into the dressing)

Today I'm sharing an excellent and easy recipe for using with Chicken Breasts or Chicken Tenders from North Pasture Farms (link to shop in the comments).

Ingredients
1½ T olive oil
1-2 pounds chicken breast (original recipe has you pound them thin but I'm too lazy to do that!)
salt and fresh ground pepper
2 T butter (divided)
1 yellow onion, diced relatively fine
3 garlic cloves pressed through a garlic press
½ t Italian seasoning
drop or two of honey or maple syrup
2 t aged balsamic vinegar
½ cup chicken bone broth
½ cup heavy whipping cream

Heat the oil over medium heat. Salt and pepper the chicken and add to skillet. Allow to cook, untouched, for about 5 minutes or so.

Add 1T butter to the skillet and flip the chicken over and cook through (167 degrees). Remove from the pan and cover to keep warm.

Add the rest of the butter to the skillet and cook the onions until translucent (about 7 minutes). Lower the heat so they don't burn. You just want them nice and soft.

Add the garlic and give it a quick stir. Then add the Italian seasoning, honey/syrup, and balsamic. Let that cook for a minute or two, then whisk in the bone broth, scraping up the nice browned bits of onion and garlic while you whisk. Yum!

Increase the heat so it reduces a bit (optional if you're really hungry) and then decrease it again and slowly add the heavy cream, making sure it doesn't boil.

Add your chicken back in to the yummy sauce and allow that to cook for a minute or two before you remove it from the heat. Let it stand for a few minutes so the sauce thickens a bit.

Serve over noodles or rice or nothing. So so delicious. It's a quick and easy dinner and makes great leftovers so make a double or triple batch so you'll have a few meals worth. Some people double the sauce ingredients anyway because it's just so so good.
