We’re deeply grateful to walk this journey together as a family — but even more grateful for the peace of knowing that no matter what we face, and who is beside us, we are never truly alone. God is with us. 🤍

Today is an important day for our farm. At 10 AM, we’re appealing a ruling that classified our operation as a “hobby farm” rather than a legitimate business — which can greatly affect us financially.

Because pecan trees take many years to mature, farms often operate at a loss long before they ever turn a profit — those early years are an investment, not a hobby. Being classified otherwise limits how we can manage expenses and reinvest in the farm’s future.

We’ve been waiting and praying for this moment, trusting that truth and clarity will prevail. While we do love this land and consider ourselves blessed, we don’t manage 2,000 trees and a herd of bison solely for enjoyment 😅. We intend to build something profitable that will last and sustain future generations so they can continue the good work.

This made me second guess myself! Would you give chili and cinnamon rolls a try?
How about you start with this chili recipe first.

Pumpkin Chili (with bison, venison, or beef)
⬇️ Full recipe below ⬇️

INGREDIENTS
• 1 lb ground meat
(can use 2 lbs if you have big meat eaters)
Bison, venison, beef — any ground red meat
• 1 tbsp cooking fat (we use tallow; avocado oil works too)
• 1 onion, diced
• 4 cloves garlic, minced
• 1 cup broth
(we use homemade chicken bone broth, but any stock works)
• 15 oz diced tomatoes (fire roasted if you can!)
• 1 cup organic pumpkin purée
• 2 tbsp tomato paste
SPICES
• 2 tbsp chili powder
• 1 tbsp cumin
• 1 tsp oregano
• 2 tsp garlic salt (or regular salt)
• 1 tsp pumpkin pie spice
• 2 tsp cinnamon
• 1 tsp paprika

INSTRUCTIONS (Instant Pot or Stovetop)
1 Sauté onion in cooking fat until translucent
2 Add garlic and cook about 1 minute (don’t let it burn)
3 Add meat and brown
4 Once browned, add everything else — no need to remove anything
5 Stovetop: bring to a boil, then simmer at least 30 minutes (or keep warm longer)
6 Instant Pot: pressure cook on high for 10 minutes
Note: It takes time to build and release pressure — that’s normal
7 Let pressure release naturally if you have time, or manually if you’re hungry

Homemade granola is one of our favorite ways to use fresh pecans and this is your sign to make granola from scratch! Better for your budget, health, and tastebuds 😋.

You probably have everything in your pantry to make it today, but if you don’t, we know where you can get some delicious farm fresh pecans 🤗 because crunch and sweetness matters!

✨ From our kitchen to yours — save this and keep the magic alive with simple, real food recipes.
Bonus: your house will smell amazing.

Homemade granola is one of those things that’s:
✔ endlessly customizable
✔ 10× better than store-bought
✔ surprisingly easy

Chocolate chips? Cranberries? Toasted coconut? Saltier? Sweeter?
Make it yours. Don’t take the measurements too seriously — this is a starting point, not a rule book.



🥣 HOMEMADE GRANOLA

(we got a little out of order in the video and it’s totally fine 😅)

Combine all dry ingredients:
• 4 cups oats (we use sprouted!)
• 1 cup TLC pecans
• ½ cup sprouted pumpkin seeds (so many benefits)
• 1 tsp salt
• 1 tsp cinnamon

Add wet ingredients:
• ½ cup coconut oil
• ½ cup honey or maple syrup
• 1 tsp vanilla (or more… always more)



🔥 Bake
• Spread on a parchment-lined baking sheet (don’t skip this — trust me)
• Bake at 350° for 20–25 minutes
• Stir halfway, then pack it down if you like extra chunky (I do 🙋‍♀️)
• Remove when it just starts to brown

👉 Notice in the video how it gets darker as it cools — that’s normal!



⏳ The hardest part: WAIT

Let it cool at least 1 hour (longer is even better).
Somehow it re-absorbs all the liquid and goodness ✨
Then break it up into your preferred chunkiness.

POV: you didn’t know duck bone broth would taste like this🤯🦆

The reactions don’t lie 👀

We were so minimal on what we put in to really taste what made the duck bone broth DUCK and we LOVED it! As always, our best bone broth formula is to pressure cook on high for 2 1/2 hours and then keep warm for 8+! Leaving it to keep warm makes it incredibly thick, gelatinous and nutrient dense.

We’re a family working together on our farm & ranch—trying to nourish our bodies, steward the land, and honor God in all we do.
