Meatloaf with Mashed Potatoes
Ingredients:
For the Meatloaf:
1 1/2 lb ground beef
1/2 cup breadcrumbs
1/2 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon chopped parsley
For the Glaze:
1/3 cup ketchup
1 tablespoon brown sugar
1 teaspoon Dijon mustard
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
4 tablespoons butter
1/2 cup warm milk or cream
Salt and pepper to taste
Directions:
Preheat oven to 350°F (175°C).
In a bowl, combine breadcrumbs and milk; let sit 5 minutes.
Add ground beef, egg, onion, garlic, Worcestershire sauce, salt, pepper, paprika, and parsley. Mix gently until combined—do not overmix.
Shape into a loaf and place on a lined baking sheet or loaf pan.
Mix glaze ingredients and spread half on top of the meatloaf.
Bake for 45 minutes, spread remaining glaze, and bake an additional 15 minutes. Let rest 10 minutes before slicing.
For mashed potatoes, boil potatoes until fork-tender, about 15 minutes.
Drain and mash with butter, warm milk, salt, and pepper until smooth and fluffy.
Serve slices of warm meatloaf over or beside creamy mashed potatoes.

POT ROAST OVER MASHED POTATOES
Ingredients:
For the Pot Roast:
3 lb beef chuck roast
2 tablespoons olive oil
1 onion, chopped
3 carrots, chopped
3 celery stalks, chopped
4 cloves garlic, minced
2 cups beef broth
1 cup red wine (optional; replace with broth if preferred)
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
4 tablespoons butter
1/2 cup warm milk or cream
Salt and pepper to taste
Directions:
Preheat oven to 300°F (150°C).
Heat olive oil in a large Dutch oven over medium-high heat.
Season roast with salt and pepper, then sear on all sides until browned. Remove and set aside.
Add onions, carrots, and celery to the pot. Sauté 4–5 minutes, then add garlic and cook 1 minute more.
Stir in tomato paste, beef broth, wine, thyme, rosemary, and bay leaf.
Return the roast to the pot, cover, and transfer to the oven.
Braise for 3–3.5 hours, or until fork-tender and falling apart.

Ingredients:
2 tablespoons olive oil
1 pound breakfast sausage (links or ground)
3 medium russet potatoes, peeled and diced
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried parsley
Salt and pepper to taste
4 large eggs
Optional toppings: shredded cheddar cheese, chopped green onions, or hot sauce
Directions:
Cook the Sausage:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 8–10 minutes. Remove from the skillet and set aside.
Cook the Potatoes:
Add the remaining tablespoon of olive oil to the skillet. Toss in the diced potatoes, and season with smoked paprika, parsley, salt, and pepper. Cook for 10–12 minutes, stirring occasionally, until the potatoes are golden brown and tender.
Add the Veggies:
Add the onion, red bell pepper, green bell pepper, and garlic to the skillet with the potatoes. Cook for an additional 5–7 minutes until the veggies are softened.
Combine and Cook the Eggs:
Return the cooked sausage to the skillet, mixing it with the potatoes and vegetables. Create four small wells in the skillet and crack an egg into each well. Cover the skillet and cook for 3–5 minutes, or until the eggs are cooked to your desired doneness.

4 strips of bacon
2 large eggs
2 tablespoons olive oil or butter
Fresh chives or parsley, chopped (for garnish)

Directions:
Grate the potatoes and place them in a clean towel. Squeeze out as much excess water as possible.
In a bowl, combine grated potatoes, flour, beaten egg, salt, and pepper. Mix well to form the hash brown mixture.
Heat 1 tablespoon of oil in a skillet over medium heat. Add spoonfuls of the potato mixture, flattening them slightly. Cook 3–4 minutes per side until golden and crisp. Transfer to a paper towel-lined plate.

1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cubed
1/2 cup whole milk
For Serving:
Vanilla ice cream, for topping
Directions:
Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
In a medium saucepan, combine cherries, sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat for 5–7 minutes, stirring occasionally, until the mixture thickens slightly. Pour into the prepared baking dish.

6 large eggs
1/4 cup milk
Salt and black pepper to taste
1 tablespoon butter
1/2 lb breakfast sausage (links or crumbled)
1/4 cup shredded cheddar cheese (optional)
2 tablespoons chopped chives or green onions (optional)
Directions:
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined and slightly frothy.
In a skillet over medium heat, cook sausage until browned and cooked through (about 6–8 minutes). If using links, slice after cooking. Remove sausage from skillet and set aside.
Wipe excess grease from the pan, then melt butter over medium-low heat.
Pour in the egg mixture and let it sit undisturbed for a few seconds. Gently stir with a spatula, pushing eggs from the edges toward the center.
Continue to cook slowly, stirring occasionally until just set but still soft and creamy.

For the ribs:

2 racks pork ribs
2 tablespoons paprika
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1 teaspoon salt
1 cup BBQ sauce

For the coleslaw:

3 cups shredded cabbage
1 cup shredded carrots
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon sugar
Salt and pepper to taste

Directions:

Preheat oven to 300°F (150°C).
Remove the membrane from the back of the ribs and pat dry.
In a bowl, mix paprika, brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper.
Rub the spice mixture evenly over both sides of the ribs.
Wrap ribs in foil and place on a baking sheet.
Bake for 2.5–3 hours until tender.
Remove ribs from oven and brush generously with BBQ sauce.
Broil on high for 5–7 minutes until caramelized and slightly charred.
In a large bowl, combine cabbage and carrots.
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper.

6 tablespoons unsalted butter, chilled and cut into small cubes
1/4 cup boiling water
Optional Topping:
1 tablespoon sugar + 1/2 teaspoon ground cinnamon (for sprinkling)
Directions:
Preheat your oven to 375°F (190°C).
In a large bowl, mix sliced peaches with sugars, cinnamon, nutmeg, vanilla extract, lemon juice, and cornstarch. Toss until peaches are well coated.

Directions:

In a large pot over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the pot.
