Seafood Boil Recipe with Cajun Butter Sauce

Ingredients:
- 16 ounces Zatarain’s crab boil seasoning (four 4-ounce bags)
- 1 teaspoon liquid crab boil (optional)
- 1 pound red potatoes (washed and halved)
- 2 lemons (halved, plus more for serving wedges)
- 2 oranges (halved)
- 2 medium yellow onions (halved)
- 4 pounds snow crab legs or king crab legs
- 2 pounds Dungeness crab legs
- 27 ounces smoked sausage andouille ropes (cut into 2-inch pieces) (two 13.5-ounce packs)
- 1 pound jumbo shrimp (peeled and deveined, frozen or thawed)
- 12 corn niblets (frozen or fresh)
- 16 ounces hot banana peppers (drained)
- 12 boiled eggs (for serving, optional)
- 2 cups unsalted butter
- 4 cloves garlic (minced)
- 1/4 cup Cajun or Creole seasoning
- 2 tablespoons Old Bay seasoning
- 1 tablespoon lemon zest
- 1 tablespoon granulated onion
- 1 tablespoon granulated garlic
- 1/2 tablespoon coarse black pepper
- 2 tablespoons lemon juice
- 1 cup chicken stock
- 2 tablespoons hot sauce
Directions:
1. Fill a large pot with water about 3/4 full. Toss in the crab boil seasoning packets and the optional liquid crab boil; bring to a rolling boil.
2. Add the red potatoes, onions, lemons, and oranges to the boiling water. Let them cook for 10 to 15 minutes, until the potatoes are fork-tender but not mushy.
3. Now, it's time for the crab legs and andouille sausage! Toss them into the pot and cook for about 10 minutes.
4. At the five-minute mark, throw in the shrimp and hot banana peppers. The shrimp should turn pink and opaque when cooked through.
5. Once everything is done, turn off the heat and add the corn niblets to soak in all those delicious flavors. Let it sit for 15-20 minutes.
6. If you’re using boiled eggs, you can either add them to the pot for the final few minutes of cooking for extra flavor or serve them separately. Just make sure they’re fully boiled!
7. Finally, use a slotted spoon or strainer to transfer the seafood and veggies to individual boil bags or a large serving platter.
8. Just before serving, toss everything with the homemade Cajun butter sauce (detailed below) for a mouthwatering finish!
Cajun Butter Sauce:
Melt the butter in a saucepan, add minced garlic, Cajun seasoning, Old Bay, lemon zest, granulated onion, granulated garlic, black pepper, lemon juice, chicken stock, and hot sauce. Stir well and let it simmer for a few minutes to blend those flavors.
