Cristeta Comerford’s Lumpia (Filipino Spring Rolls)
Makes about 30 rolls

Ingredients:

1 lb ground pork (or beef/chicken)

1 cup carrots, finely chopped or grated

1 cup green beans, finely chopped

1 small onion, finely chopped

3 cloves garlic, minced

½ cup water chestnuts, chopped (optional)

2 tbsp soy sauce

Salt and pepper to taste

Lumpia wrappers (spring roll wrappers)

Oil for frying

Instructions:

In a large bowl, combine ground meat, carrots, green beans, onion, garlic, water chestnuts, soy sauce, salt, and pepper. Mix well.

Lay one lumpia wrapper on a flat surface with one corner facing you (diamond shape).

Spoon about 2 tbsp of filling near the corner closest to you.

Fold corner over filling, then fold sides inward, and roll tightly toward the far corner. Seal edge with a bit of water.

Heat oil in a deep skillet or wok to 350°F (175°C). Fry lumpia in batches until golden and crisp, about 3–5 minutes.

Drain on paper towels. Serve hot with sweet chili sauce or vinegar dipping sauce.

Madhur Jaffrey’s Chicken Curry (Simplified)
Serves 4–6

Ingredients:

2 lbs (900g) chicken pieces (bone-in or boneless)

3 tbsp vegetable oil or ghee

2 onions, finely chopped

3 garlic cloves, minced

1-inch piece ginger, grated

2 tsp ground coriander

1 tsp ground cumin

1 tsp turmeric

1 tsp chili powder (adjust to taste)

1 tsp garam masala

2 large tomatoes, chopped (or 1 cup canned tomatoes)

Salt to taste

1 cup water or chicken stock

Fresh cilantro, chopped (for garnish)

Instructions:

Heat oil or ghee in a large pan over medium heat. Add onions and sauté until golden brown.

Add garlic and ginger; cook 1–2 minutes until fragrant.

Stir in coriander, cumin, turmeric, chili powder, and garam masala. Cook spices for 1 minute.

Add tomatoes and salt. Cook until tomatoes break down and oil separates from the masala (5–7 minutes).

Add chicken pieces and stir to coat with the masala.

Pour in water or stock. Bring to a simmer, cover, and cook gently for 30–40 minutes until chicken is cooked through and tender.

Adjust seasoning. Garnish with chopped cilantro before serving.

Delia Smith’s Victoria Sponge Cake (Simplified)
Makes 2 x 8-inch cakes

Ingredients:

200g (1 cup) unsalted butter, softened

200g (1 cup) caster sugar (superfine)

4 large eggs

200g (1½ cups) self-raising flour, sifted

1 tsp baking powder

2 tbsp milk

1 tsp vanilla extract

Raspberry jam (for filling)

Whipped cream or buttercream (optional)

Icing sugar (for dusting)

Instructions:

Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake tins.

Cream butter and sugar until light and fluffy.

Beat in eggs one at a time, adding a spoonful of flour if batter starts to curdle.

Fold in remaining flour and baking powder gently. Add milk and vanilla.

Divide batter evenly between tins. Smooth tops.

Bake for 20–25 minutes or until golden and a skewer comes out clean.

Cool cakes in tins for 5 minutes, then turn out onto wire racks to cool completely.

Spread one cake with raspberry jam and cream or buttercream if using. Top with second cake.

2 sole fillets (Dover or lemon sole), skin removed

Salt and pepper

½ cup all-purpose flour (for dredging)

2–3 tbsp unsalted butter

1 tbsp chopped parsley

Juice of ½ lemon

Lemon wedges (for serving)

Instructions:

Pat fish dry thoroughly. Season both sides with salt and pepper.

Dredge lightly in flour, shaking off excess.

Heat 2 tbsp butter in a skillet over medium heat until foamy but not browned.

Elizabeth David’s Ratatouille (Simplified)
Serves 4–6

Ingredients:

1 eggplant (aubergine), diced

2 zucchinis (courgettes), sliced

1 onion, sliced

1 red bell pepper, sliced

2 cloves garlic, minced

4 ripe tomatoes, chopped (or 1 can whole tomatoes, drained and chopped)

Olive oil

Salt and pepper

Fresh basil or thyme (optional)

Instructions:

Salt eggplant cubes and let sit 30 mins in a colander to draw out moisture. Rinse and pat dry.

In a large pan, heat olive oil and sauté each vegetable separately (eggplant, zucchini, onion, and pepper) until lightly browned. Remove and set aside each batch.

In the same pan, add garlic and tomatoes. Cook until tomatoes break down into a sauce (10–15 min).

Return all vegetables to pan. Season with salt, pepper, and herbs if using.

Simmer gently, uncovered, 30–40 minutes, stirring occasionally, until vegetables are tender and flavors meld.

Serve warm or at room temperature.

Claudia Roden’s Chicken with Oranges and Almonds
Serves 4–6

Ingredients:

1 whole chicken (about 3–4 lbs), cut into pieces

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 tsp ground cinnamon

½ tsp ground ginger

Salt and pepper

Juice of 2 oranges

Zest of 1 orange

1 tbsp honey

½ cup blanched almonds

2 tbsp chopped parsley or cilantro (optional)

Instructions:

In a large pan, heat olive oil over medium heat. Brown chicken pieces on all sides. Remove and set aside.

In same pan, sauté onion until soft. Add garlic, cinnamon, ginger, salt, and pepper. Cook 1–2 minutes.

Return chicken to pan. Add orange juice, zest, and honey. Cover and simmer 45–60 minutes until chicken is tender.

Meanwhile, toast almonds in a dry pan until golden.

Uncover chicken in last 10 minutes to reduce sauce if needed.

Scatter toasted almonds and herbs on top before serving.

Sylvia Woods’s Barbecue Ribs (Simplified)
Serves 4–6

Ingredients:

2 racks pork spareribs (about 4–5 lbs total)

Salt and pepper

Garlic powder

1 cup barbecue sauce (store-bought or homemade – Sylvia’s preferred sweet & tangy style)

Optional Dry Rub:

1 tbsp brown sugar

1 tsp paprika

½ tsp cayenne

1 tsp onion powder

Instructions:

Preheat oven to 300°F (150°C).

Rinse and pat ribs dry. Remove membrane from the back if needed.

Rub ribs with salt, pepper, garlic powder, and optional dry rub.

Place ribs on a foil-lined baking sheet. Cover tightly with foil.

Bake for 2.5–3 hours until tender.

Remove from oven, increase heat to 425°F (220°C).

Brush ribs generously with barbecue sauce. Return to oven uncovered for 15–20 minutes, or broil 3–5 minutes until caramelized and sticky.

Let rest a few minutes. Slice between bones and serve with extra sauce.
