My grandmother used to make these quick pickles in the summer, and now I've adapted her recipe for my family. It's super easy! I don't measure anything precisely, but here's how I do it:

I start with whatever fresh veggies I have on hand, but green tomatoes are my favorite. I slice them up along with some cucumbers, onions, and any other veggies I find. Then, I grab a glass jar and layer in the veggies.

Next, I sprinkle in some pickling salt and a mix of white vinegar and apple cider vinegar—just enough to cover the veggies. I throw in a few black pepper corns, fresh dill and basil from my garden, and a couple of garlic cloves for extra flavor (plus, you can use these in other recipes later!).

Pop the lid on the jar and stick it in the fridge. They're good to go in just a few hours, but they really hit their stride after a couple of days. They make a perfect side dish for dinner or a tasty snack anytime. Enjoy!
