Meet Everything Bagelry in Bainbridge, 63 miles southeast of us. Four friends from Sidney started it: Matthias Wesner, Tyler Bookhout, Ian Yoder and Erik Hartshorn. The recipe came from Tyler's grandmother.

They roll every bagel by hand. No machines, no refined sugar, and they buy local where they can, down to the eggs and the honey. Matthias has said the early days were hours of research and practice, playing with water temperatures and room temperatures until the dough behaved. They opened making 600 bagels a day.

Six of their 6-packs are on our menu this week. Original and Everything are $6.89. Rosemary Parm and Olive Oil, French Toast, Jalapeno Cheddar and Asiago are $8.59. Rosemary Parm is down to four.

Meet Kriemhild Dairy Farms in Hamilton, 36 miles southeast of us. That photo is the Rivington family the year they bought Red Gate Farm. Bruce and Nancy had just moved their dairy down from Ontario with one goal: get the cows onto grass and keep them there.

Red Gate is still one of the farms that supplies the creamery, and Bruce owns Kriemhild. It started about ten years after the move as a partnership between the Rivingtons and three other local farm families. The other three left in 2012 and the Rivingtons took it over.

The butter is the reason to care. They churn fresh sweet cream slowly to 85 percent butterfat, well above what a grocery store brick gives you, and the milk comes from grass-fed herds here in Central New York. The name comes from a herd of Holstein-Friesians raised by Gerrit Smith Miller a few miles down the road from the creamery.

One thing of theirs is on our menu this week: Salted Rolled Butter, 1 lb, $15.69. It is not a cheap stick of butter and it is not trying to be.

Meet Bozza Pasta, 78 miles west of us in Rochester. Michael Bozza and his wife Marisa run it, and Michael is a third-generation pastaio.

His family comes from Gragnano, just outside Naples, the town Italians call the city of pasta. Michael's grandfather ran a pasta company there, and his father trained at the School of the White Arts, where they teach the whole process from the grain through the drying. Michael learned it working alongside them. He and Marisa started Bozza in 2016, and she brought a degree in nutrition and dietetics to the recipe side.

Eight of their products are on our menu this week. Five ravioli in 12 oz bags at $7.99: Five Cheese, Ricotta Spinach, Pumpkin, Smoked Mozzarella and Sun-dried Tomato, and Artichoke and Provolone. Three sauces and pestos in 6 oz jars at $6.69: Sugo Limone, Sundried Tomato Pesto and Basil Pesto.

The pumpkin ravioli is the one to grab in October.

Meet Heidelberg Bread Company in Herkimer, about 65 miles east of us. That is their stand at the Little Falls farmers market, and everything in those baskets is made from four ingredients: flour, water, salt and yeast. Nothing else goes in.

Boyd Easton Bissell Sr. started the bakery after apprenticing in some of the best bakeries in Paris. He came home to Fly Creek, New York with the techniques, wrote his own recipes, and started with a single variety sold to a few independent markets. Heidelberg bakes 15 varieties now and sells into more than 700 stores across New York State, New York City and New Jersey. All of it is certified kosher.

Fifteen of their breads are on our menu this week and every one of them is $3.79: French Peasant, Sourdough, Multi Grain, Cracked Wheat, Whole Wheat, Oat Bran, Hearty Flaxseed, White, Jewish Rye, Rye, Pumpernickel, Raisin Sunflower, Biaggio Asti Italian, Dinner Rolls and Hamburger Rolls. Dinner Rolls, Jewish Rye and Rye are each down to one.

Meet Syracuse Salt Company, fifteen miles from our warehouse. David Iannicello and his daughter Libby Croom run it, and they are the reason Syracuse is making salt again.

Syracuse has been called the Salt City since the 1700s, when the brine springs around Onondaga Lake supplied a large share of the country's salt. That industry shut down generations ago. David grew up here, got curious about the history, and in 2015 he talked Libby into tasting batches with him until they got one right.

They draw brackish water from 280 feet underground and evaporate it by hand in small batches. Their flagship is called Salt City Flake, and it now sits on shelves in more than 40 stores across New York.

Six of their salts are on our menu this week: Salt City Flake, Roasted Garlic Flake, Rosemary Flake, Sriracha Sea Salt, Chili and Black Lime, and Smoked Sea Salt. Rosemary is down to three jars.

Meet Indian Milk and Honey in Freeville, about 56 miles south of us. Ipsh*ta and Amrit run it. They both grew up in India and both had careers of their own, and they moved to Upstate New York because they wanted to work together and start a family.

While Amrit went back to school, Ipsh*ta worked on a lassi recipe. When it came time to find out whether it was any good, they took it to a tasting and set out two crates for people to drop their cups in. One was labeled "Don't like it. Don't quit your day job." The other said "Like it. Quit your day job." By the end of the day the second crate was full of empty cups.

They leased a creamery 50 miles from home and spent two years making it in small batches and selling it out of the back of their car. Retailers around the country started calling, so they built their own plant in Freeville.

Two of their lassis are on our menu this week, mango and rosewater and blueberry cardamom, $1.39 each.

Meet Emmi Farms in Baldwinsville, 25 miles up the road.

Anthony Emmi started it in 1946 in North Syracuse, selling fruit and vegetables off a roadside stand and at the regional market in Syracuse, the same market we work out of today. It passed to his son Carmen and his son-in-law Sam Mangano, who built it up to 80 acres. Carmen's eldest son Tony joined in 1992 and runs it now. The Baldwinsville farm came two years after that.

It is 300 acres now and hires close to 100 people in season, most of Carmen's grandchildren among them. That makes four generations on the same farm.

Tony told the Daily Orange a few years back: "It's nice to know that our crops are being consumed locally. I like the whole idea of that, just trying to cut back on the food miles."

Eight of their items are on our menu this week and five of them are peppers: red bell, green bell, jalapeno, long hot and Hungarian wax. Grape tomatoes, collard greens and kale round it out.

New to Off the Muck? Use code EMMI when you sign up and your first box comes with a free pint of Emmi Farms grape tomatoes.

Meet Grass Fed in Rochester, about 73 miles west of us. Rob Nipe and Nora Rubel run it, and it was the first vegan butcher shop in the city.

It started with a breakfast sandwich. After the two of them went vegan, that was the thing they missed most, so Rob worked on a plant-based sausage recipe at home until he got it right. It took a lot of tries. They opened in 2019 out of a shared kitchen in the Hungerford Building, then moved into their own storefront on Monroe Avenue in 2021.

Everything is made by hand in small batches, and the case runs about two dozen items. Rob says more than half of their customers are not vegan. He calls the shop vegan training wheels.

Five of their items are on our menu this week: sliced salami, bacon, turkey, Italian sausage and pepperoni.

Meet College Club Beverages in Rochester, about 100 miles west of us. Brothers Joe and Louie Petix run the company their grandfather started in 1922 on Grape Street. He lived next door to the bottling plant, and the soda is still bottled on that same street today.

Both brothers started working there as kids, at 8 and 10 years old. Between the sodas, seltzers and mixers they make about 25 flavors. All of them are sweetened with cane sugar instead of corn syrup, and every one comes in a returnable glass bottle.

They also bottle a Syracuse Orange Soda, which is a generous thing for a Rochester company to do.

Thirteen of their flavors are on our menu this week at $1.39 each.
