Oxtail Shells and Cheese Egg Roll...take one!

I want just A LITTLE more meat, more cheese and a sauce other than sriracha. The oxtail was tender and seasoned well.

This is from the first fry. They get more golden brown yet remain juicy after the second fry. The First fry is at 325 degrees for 5 minutes, then the second fry at 350 degrees for 1-2 minutes. *chef’s kiss*

When making egg foo young (or in my case Egg Foo Aye Young), make sure the oil is HOT (not too hot though) and kinda shallow in your wok. To test out the heat, throw a bean sprout in and see if it starts spinning. That’s what I’ve learned in my many attempts.
