Removed the bone off this 13 lb Christmas ham followed by an eight day cure.  After a nice rinse in Juanito's white wine...

Removed the bone off this 13 lb Christmas ham followed by an eight day cure. After a nice rinse in Juanito's white wine, added a sweet brown sugar glaze to rest overnight in the fridge.... smoked with pecan and hickory. And here's the final product...

I'm sure many of my OKC friends remember these beauties well. Here's just a small tidbit into the Christmas ham project.

1. Remove bone from fresh pork hindquarter and place into netting
2. Mix all the brine ingredients and bring to a boil.

These two will spend the night in a fridge and tomorrow they will both go into my brining container for 7 days. I'll be smoking two of these bad mama's on the 24th...
