Baked Pumpkin Donut Holes
A lighter, baked version that’s just as fluffy and delicious!
Here’s how to make it:
Ingredients:
1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp ground cloves
1/2 tsp salt
1/2 cup pumpkin purée
1/4 cup sugar
1/4 cup brown sugar
1 egg
1/4 cup milk
2 tbsp vegetable oil
1 tsp vanilla extract
Cinnamon-Sugar Coating:
1/2 cup sugar
1 tbsp cinnamon
1/4 cup butter (melted)
Instructions:
Prep:
Preheat the oven to 350°F and grease a mini muffin tin. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
Mix Wet Ingredients:
In another bowl, whisk together the pumpkin purée, sugar, brown sugar, egg, milk, vegetable oil, and vanilla until smooth.
Fill Muffin Tin:
Add the wet ingredients to the dry ingredients and mix until just combined. Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
Bake:
Bake for 10-12 minutes or until a toothpick comes out clean. Let cool slightly.
Coat:
Roll the donut holes in melted butter and then in the cinnamon-sugar mixture.
Serve:
