Six more days until Spring! 🌷 Even though it's getting warmer, we are still a few months out from fresh greens being available.
Being a farm-to-table restaurant during the winter is TOUGH. But, we work with an amazing farmer partner who helps get us through the cold months.
Mindful Me Farms is a hydroponic farm based in Cheney. They grow lettuce, microgreens and herbs year around in their state-of-the-art facility. Their produce is grown vertically to maximize plant growth. In fact, they can grow 4.5 tons of produce annually in a 320 square-foot-space. How cool is that?!
