Banana chocolate chip muffins, because this is my self-care today. A slow day, a little something sweet, and exactly what my heart needed.
These were inspired by my friend Chew On This, she always has good recipes, so if you don't already, go give her a follow as well!!
If this cozy moment speaks to you, go on and save, share, and follow for more emotional-support-baking around here.
And since I was baking in my feelings today, I had to wear my shirt that my sweet friend 2Hearts Handmade sent me!!
Thanks again Megan!!!
You're awesome!!!
Banana chocolate chip Muffins with Crumble Crumble:
Stir together 1/3 cup brown sugar, 1/3 cup flour, 1/2 tsp cinnamon. Pour in 3 tbsp melted butter and mix until clumpy.
Toss in fridge.
Muffins:
1. Heat oven to 350°F. Line 12 muffin cups.
2. In one big bowl: Mash 3 bananas. Whisk in 1/2 cup maple syrup, 1 egg, 1/4 cup melted butter, 1/4 cup sour cream, 1 tsp vanilla.
3. Dump in 2 cups flour, 1 tsp cinnamon, 1 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt. Stir just until combined - lumps are fine. Then stir in 1 cup mini-chocolate chips. You can add some pecans here if you want to instead, but I like the chocolate.
4. Scoop into liners, crumble that topping on, bake
18-20 min until toothpick comes out clean.
