This tiramisu has a secret...👀..and we bet you can’t even taste the secret ingredient (we’ll give you a hint: it’s umami).

It’s soy sauce! That’s right, we’ve paired SANC Soy Sauce and Kyoto Black Coffee for an twist on this indulgent classic. Of Korean origin, SANC is more sweet and full than most soy sauces on the market. Plus, it emboldens the coffee flavors in the Japanese-style cold brew from Kyoto Black. Both familiar and new, we promise you’ll want to try this for yourself!

RECIPE // Secret Ingredient Tiramisu
6 large egg yolks · 1/4 cup sugar · 1.5 cups Kyoto Black cold brew · 16oz mascarpone cheese · 30 Italian ladyfingers · quality cocoa powder · 1tsp SANC soy sauce

Whisk yolks and sugar together until pale and thick ~5 mins. Add half the cold brew, mascarpone, and soy sauce and mix until smooth. Dip ladyfingers in remaining cold brew and splash of soy sauce without getting them soggy. Layer ladyfingers and cream mixture twice. Chill for at least 6 hours or overnight. Dust with cocoa or top with chocolate before serving. Enjoy decadence!

They’re all leveled up with—you probably didn’t guess it—soy sauce. Yup. The next new secret ingredient in all your dishes will be this Korean soy sauce, which not only adds a layer of rich tanginess but reduces the need for salt and sugar in lots of recipes!

We chatted with SANC Soy Sauce’s Mike Segway about growing up in a Filipino-Japanese household and now using Korean soy sauce to enrich his favorite Filipino dishes.

You’ve likely tried your hand at pickled radishes before, but maybe not daikons! Either way, we bet you’ve never pickled the watermelon and purple daikons we have in store. Kick up the heat with some peppers and spices and instantly amp up any meal! 🌶️

RECIPE // Spicy Pickled Daikons
1lb daikon radish · 1tbsp table salt · ½ cup sugar · ½ cup apple cider vinegar · ½ cup water · 2tbsp sea salt · 2 red chillies, washed and finely sliced · 4 tbsp dill

Peel and thinly slice radishes. Sprinkle with salt and let sit for 2 hours to draw out moisture. Add salt, sugar, vinegar, water and chillies to a saucepan and bring to a boil. Stir the pickling mixture until salt and sugar are dissolved, then set aside to cool. Layer radish and dill in an airtight and sterilized glass container. Pour pickling liquid into container, ensuring all surfaces of the radish are covered. Let sit for at least 2 days (preferably 1 month) for flavors to marinate. Enjoy!

What the kale?!

Red, baby, white Russian, curly, dino, lacinato–who knew there could be so many different varieties of kale? Guess you’ll have to try them all!

Just in from Fruitful Hill Farm and Gray Farms Organics, we have kale, collards, and rainbow chard. And from Joyful Harvest Organics we have more ramps, cherry belle radishes, plus French Breakfast radishes from Always Somethin’ Farm. This week’s harvest is raking it in from farms all across the local region!
