One of my favorite cuts from Lone Mountain Wagyu - skirt steak. Beautiful marbling, insane flavor, and the kind of cut that demands high heat and very little patience.

First time using the Spanglish Asadero Carne Asada blend... absolutely delicious. Smoky, savory, with just enough kick to let the beef still tell the story.

Grilled hard and fast - 3 minutes per side, rested 5 minutes, sliced against the grain.

Sorry for no final money shot. The steak didn’t stand a chance once it came off the grill.
