Sometimes we find fun stories in our data that are too good not to share: It turns out that “French dip” is a top growing dish in Latin American cuisine. Why is this beefy, American-born sandwich suddenly popping up on Latin menus? Because some restaurants are using it as a way to describe a dish that’s new to many customers — birria.

The fast-growing Mexican dish is showing up in the U.S. in tacos and quesadillas with brothy soup to dip. It’s not that far removed from the French dip, which comes with a side of au jus. (French dips are also going strong in the sandwich world because they tap into consumers’ desire for an experiential meal)

It’s a reminder that when adding new items to a menu, it’s important to relate them to something familiar.

Consumer interest in global flavors is accelerating, particularly with younger generations — and that’s true for both savory and sweet dishes. There’s perhaps no better example of the sweet side of this than in the donut category, where ‘milk dumpling’ is the fastest-growing callout on menus by far, up 552% in the last four years.

Other top growing global callouts included Indian, Chinese, Thai and flavors like saffron.

So ‘donut’ hesitate to experiment with global flavors in sweet menu items — it’s a ‘hole’ new opportunity to capture adventurous consumers.
