We are incredibly excited to announce our Sunday Pop-Up Series!

We’ve had the incredible opportunity to make beer with some of the best restaurants in Chicago. They are often gracious enough to let us (and our beers) into their homes, so this time we are returning the favor! One Sunday every month, we’re going to host one of Chicago’s finest at our taproom for an evening of ridiculous food, great beers, and general hijinks. Each pop-up might look a little different depending on the partner, but generally speaking these will be casual hangs β€” so bring your friends, your appetite and kick those Sunday blues in the ass.

We got a really kind shoutout from our friend over at in a recent piece asking 9 brewers to name a future classic. Humbling to be mentioned alongside some truly incredible beer.

Will Be came before is/was brewing was even an idea β€” and it is now the foundation for almost everything we’ve made since. It encapsulates everything we love about saison: aromatic, dry, and balanced, with a rustic, ever-evolving character that keeps this beer endlessly interesting.

The Finer Points of Bad Behavior is our ever-evolving series pairing seasonal ingredients with unique yeast strains chosen to complement, contrast, and elevate each other. Some friends shipped us passionfruit from Ojai, CA, so we paired it with Brettanomyces Bruxellensis which is known for its citrus character. Tropical aromas of passionfruit, lemon peel, and pineapple with a long, complex finish and quenching acidity. If you weren’t already begging for summer, this will get you there.
