The man who expanded Chicago's deep-dish mainstay into a national chain has sold the River North buildings that house the original location and its sister spot back to the company for $2.3 million and $4.2 million.

At the beginning of 2019 Stephanie Swane from Modernist Cuisine reached out to have me help plan their Chicago leg of dining for this book. It was a privilege to spend a week with Nathan Myhrvold & Stephanie eating at more than 20 Chicagoland pizzerias whilst Duncan photographed the pizzas, and Sam interviewed the chefs about ingredients and techniques.
