Pavo a la Mexicana
Ingredientes
Para el pavo:
1 pavo de 12 ó 16 libras
2 onzas de ajo
6 onzas de aceite vegetal
1 onza de sal de grano
Para la salsa de adobo:
1/2 libra de chile ancho
1/2 libra de chile guajillo
1/2 onza de chile de árbol
1 onza de ajo
1 onza de sal de grano
36 onzas de cerveza clara
2 tazas de agua
Para el relleno:
2 libras de zanahoria
2 libras de papas
1 libra de
chorizo
1/2 onza de sal de grano
2 tazas de salsa de adobo
preparacion
Del pavo: Descongela completamente y perfora el pavo con un cuchillo pequeño. Muele el ajo y mezcla con el aceite vegetal y la sal. Con esta mezcla adoba el pavo completamente por fuera y por dentro.

De la salsa de adobo: Limpia los tres tipos de chiles quitándoles las semillas y el tallo. Hiérvelos con un galón de agua 8 ó 10 minutos. Sácalos y déjalos enfriar. Licúa los chiles, el ajo, la sal, la cerveza y el agua.
Del relleno: Pela las papas y las zanahorias. Córtalas en pedazos de 1/4 de pulgada y hiérvelas 4 ó 6 minutos. Es importante que los vegetales queden a medio cocer solamente. Cuela los vegetales, ponlos en un recipiente y añade la sal, el chorizo en trocitos y la salsa de adobo. Mezcla los ingredientes, rellena el pavo completamente, amarra las piernas del pavo con un cordón de cocina y adoba ligeramente con el resto de la salsa de adobo. Pon el pavo en el horno a 250 grados Fahrenheit y hornea 1/2 hora por cada libra de peso. Para evitar que se reseque, cada 2 horas adoba el pavo ligeramente con una brocha o cuchara. Media hora antes de que el pavo esté listo para servir sube la temperatura a 300 grados Fahrenheit y dora

3 cups milk, divided
1 cup sugar
2 cinnamon sticks (about 3-inch long)
1 pinch kosher salt
Directions:

Use a sharp knife to remove the kernels from the corn and place them in a blender.

Add 1/2 cup milk and puree until completely smooth (2 - 3 minutes).

Transfer the mixture to a medium pot, add the rest of the milk, sugar, cinnamon sticks, and salt. Stir.

Bring to a boil over medium high heat, stirring constantly. Then reduce heat to medium low and simmer, still constantly stirring, until the mixture is slightly thickened (about 15 minutes).

Serve hot.
