Exploring Infusion

This drink features vodka infused with an herbal tea we had laying around - a blend of licorice root, red elm bark, marshmallow root, wild cherry bark, fennel, cinnamon and orange peel. Sounds like an amaro recipe! The result tastes like a digestif.

3oz herb infused vodka
1/2 oz Cocchi Americano Rosa
1/2oz honey syrup
1/2oz lime juice
3 dashes Peychauds bitters

Shake, strain, coupe glass. Garnish with lime wheel.

Falling Leaves:

1.25oz black spiced rum
1.25oz white rum
.25oz Letherbee Fernet
3 dashes Angostura bitters
3 dashes coffee bitters
Filbert’s Pumpkin Root Beer
Charred lime wheel
Big ice

Stir rums, fernet and bitters with ice and strain into rocks glass. Top with Filbert’s and garnish with charred lime wheel.

For optional flair, serve and top in front of the drinker, and dunk the lime wheel in the beverage while still smoldering, releasing a plume of caramelized lime v***r and smoke. Set the lime wheel on top of the large ice.

Continuing the recent season-oriented drink postings, here’s one for the early autumn. Enjoying the new cooler days. The leaves beginning to change, showing occasional streaks of electric yellow. Rain. Still pining for some summer days. Here’s the drink of the moment that hinges between the last of summer and glints of the fall to come and, as usual, it’s Chicago specific with Rhine Hall brandy put proudly on display!

Rhine Hall plum brandy
Crème Yvette
Dry vermouth
Peychaud’s bitters
Lemon juice

It’s floral, it’s bright and a bit acidic. The Crème Yvette makes it slightly iridescent. But it’s also round and heavy, and full of baked stone fruit.

Chicago Summer:

1.5 oz Malört
1.5 oz Vinho Verde (chilled)
.5 oz Fernet Branca
2 dashes lavender bitters
Tonic topper

Assemble first 4 ingredients in rocks glass with large ice cube/sphere. Top with tonic. Garnish with grapefruit peel, and/or sprigs of fresh herbs. Enjoy.

Kvass & Rye:

Because what could go better with rye than more rye?

This is an unsweetened Lithuanian kvass - it's basically a rye soda. It tastes like you're drinking rye bread.

Here it's mixed with rye, coffee liqueur, sweet vermouth and a dash of cherry bitters, built in the glass over a couple big ice cubes and stirred.

Build a Better Bijou

I always liked the classic bijou cocktail, with roughly equal parts gin, Chartreuse and sweet vermouth. But I never found a combination of those ingredients that really seems to enhance the character of each of them enough to create synergy. So, here's a riff that I think DOES achieve synergy and create something much larger than its parts while indulging in each of them:

2oz etno Dunjevaća quince brandy
1oz A. E. Dor Pineau does Charentes
.5oz Chartreuse
Dash rhubarb bitters
Dash clove & cardamom bitters

Stir, strain, coupe.

Whenever I'm using coffee or coffee liqueur in a cocktail, I like to recreate flavor profiles that I find in beautiful coffees. Our test today includes flavors and aromatics that I associate with some espressos, especially single origin Ethiopia:

St. George NOLA Coffee Liqueur;
Stawski Krupnik Honey Liqueur;
A touch of Wolfberger Amer Gingembre;
Heavy dashes of Angostura orange butters;
Lemon juice;
Over a backbone of Plantation Pineapple Original Dark Rum.

And now for something completely different.

Arakku, from Mesh & Bone. Araku is Sri Lankan liquor distilled from the sap of a coconut flower and aged in native Sri Lankan wood vats. It's great, and Mesh and Bone is a company based in Chicago that specializes in alcoholic beverages you've never heard of and can't really get in the States.

You need to try this Arakku: like a buttery rum with notes of wood, coconut, menthol and some leather. I put it in a cocktail with some ingredients that I thought would enhance and amplify it's distinctive flavors: Vya sweet vermouth, kirschwasser, and some Fernet Jalinek. Very nice!

Milk punch!

You know when you mix a drink with milk or cream and to your horror it curdles? Don't toss it! Don't drink it yet! It's just the first step in the technique of making milk punch!

Let it sit for a while, maybe overnight, before straining the curds out. The proteins in the milk form a matrix (curds) that filters out tannins and all kinds of other things, softening the tastes in the liquid and clarifying it. And, when you strain it out, you get a whole new liquid, called milk punch, popular in the 18th and 19th century, that keeps for months when bottled in cellars or in the fridge.

The only amaro I could find here in Gatlinburg is a regional one, out of Bowling Green. It's actually pretty good!

La Habsbourgeoise

Having been a big fan of Laird's Applejack for quite a while, I was excited to find that Rhine Hall is now making their own version, called La Normande.

Needless to say, the stuff is divine, full of juicy fresh apple, with a balance of sweetness and earth and And it would mix readily with just about anything under the sun.
Paired with some Czech Fernet Jelinek and lime juice, it makes the perfect drink to usher in the first cool nights of autumn.

Feeling a bit under the weather? Try this variation on a hot toddy!
L&M Hot Toddy #1:
1oz Laird's Straight Apple Brandy
1oz Christian Drouin Pommeau de Normandie
.5oz St. Hubertus liqueur
.5oz Letherbee Fernet
3oz lapsang souchong tea infused with ginger and cayenne
Juice from 1/2 lemon

Steep the lapsang, powdered ginger and cayenne in hot water to begin: it will steep about as long as it takes to make the drink.
Measure brandies, St. Hubertus and lemon juice into a warm mug.
Pour lapsang souchong infusion into the mug and stir.
Top with fernet and garnish with lemon peel.
