I don’t know if anyone else grew up on these but my dad called them migas. Fried corn tortillas, onions, eggs, salt, pepper and garlic powder 😋😋
Cut 10 corn tortillas into cubes and fry until golden. Sauté a diced onion, jalapeño, and tomato until soft. Add the crispy tortillas back in, then pour in 6 beaten eggs mixed with a splash of milk. Season with salt and pepper, stir until cooked, and top with shredded cheese if you’d like.
Feeds 3–4 hungry bellies, just like it did back then. ❤️
