Anyone else spend years making sure everyone else was fed, fueled, and thriving… only to realize you have no idea what to feed yourself when the nest is empty?🪹🦆

As a busy empty-nest mom, I’m still learning that taking care of myself deserves the same attention I gave everyone else. Some days that means keeping it simple with something that actually supports my health goals instead of grabbing whatever random snack is left in the fridge.🫒

RECIPE
4 slices fresh white bread (Dohjoy Sourdough!)
2 tablespoons softened cream cheese
1 1/2 teaspoons sugar (or xylitol)
1 small egg yolk
2 tablespoons melted butter
1 tablespoon sugar (or xylitol)
3/4 teaspoons cinnamon

Steps
Make the filling: Mix 1 oz softened cream cheese (just over 2 tablespoons) with 1.5 teaspoons tsp sugar (or xylitol) and 1 small egg yolk until smooth and well combined.

Prep the bread: Trim the crusts from all 4 slices fresh white bread (Dohjoy Sourdough!) (save them for Dohjoy croutons!). Flatten each slice with a rolling pin.

Fill & roll: Spread the cream cheese mixture thinly over each flattened slice. Roll each one up like a little cigar.

Coat & freeze: Mix 1 tablespoons tbsp sugar (or xylitol) for rolling and 0.3 teaspoons tsp cinnamon together in a shallow dish. Dip each roll into 2 tablespoons tbsp melted butter, then roll in the cinnamon sugar. Lay flat on a parchment-lined sheet and freeze.

Bake from frozen: Do NOT thaw. Bake straight from the freezer at 400°F for 15 minutes or until golden.

Serve w berries, syrup or whipped cream (or all 3)! 🤌🏻
