Umm these look so good!

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
For the cookie cups:
1 cup all-purpose flour
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
For the filling:
1 cup ricotta cheese
1/2 cup powdered sugar
1/2 tsp cinnamon
1/4 cup mini chocolate chips
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
Preheat the oven to 350°F (175°C) and lightly grease a muffin pan.
Beat the softened butter and sugar until light and fluffy.
Add the egg and vanilla and mix well.
In another bowl, combine the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
Roll the dough into small balls and place them in the muffin pan.
Press each ball into the bottom and slightly up the sides to form a cup shape.
Bake for 10–12 minutes, until lightly golden.
Let the cookie cups cool completely.
For the filling, mix the ricotta, powdered sugar, and cinnamon until smooth.
Fold in the mini chocolate chips.
Spoon or pipe the filling into the cooled cookie cups.
Serve immediately or keep chilled until ready to serve.
Tip: Drain the ricotta well if it seems very wet so the filling stays thick and creamy. A little lemon zest also tastes great in the filling.
