Turkey Day is upon us and I am inundated with sauces, so help me help you put some spice in that Thanksgiving feast!

Round #2 of Tropical Thunder is ready to go!

The first round was a little bit more vinegar forward than I would have liked and it was before I had my bullet blender to pulverize everyting so I had strained the pulp out.

That round was good, but this refined recipe is way better.

I have 62 bottles ready.

Flavor Profile:
• Opening: A clean burst of pineapple and agave sweetness, with a soft fermented tang and subtle acidity from white wine vinegar.
• Mid-Palate: Yellow heirloom tomatoes add mellow depth and umami, while ginger and garlic bring warmth and savory complexity. Green onion adds a grassy lift.
• Finish: Orange habaneros deliver a smooth, tropical heat — assertive but not aggressive — with lingering fruit and spice.
Texture & Color:
• Silky and golden, with a slightly thicker body from the agave and tomato.
• Pourable with a gentle cling, ideal for drizzling or dipping.

This one is a nice, light citrus forward medium heat sauce that is silky smooth and screams for seafood. It is actually great on just about anything!

I have 54 bottles available.

• Finish: Garlic and mustard seed add savory depth, with heirloom tomato rounding the acidity. The tequila reduction leaves a smoky, herbal echo — like a devil’s whisper after the flame.

Valhalla Honey fresh off the bottling machine.

It's little brother "Buzzfire Honey" was the flavorful milder heat version, and while that one will be getting a second batch soon, I wanted a bolder medium heat to make an appearance.

There's probably that many habaneros that are ready to pick that I wasnt able to get to tonight.

There will be a return of some of the proven sauces I've made and there's also some new ones that I have plans and recipes for.

These chili plants have been awesome this year!
