"Another is Sauerkraut Seth’s, made by musician Seth Travins. He started fermenting sauerkraut in 1999 while working at Hawthorne Valley Farm in Ghent, Columbia County. The impetus was to use up some extra cabbage; he made a couple of gallons. The next year he made 1,200 pounds in four 55-gallon barrels. Production grew rapidly over the next 10 to 11 years. “By the time I left we were making 100,000 pounds of sauerkraut a year,” he said.

He decided to start his own product line in 2012; he currently produces 30,000 pounds (which equals 15 tons). The line comes in six flavors, including a pickle sauerkraut made with fresh dill, cucumbers, garlic and cabbage.

“I think a lot of people think of sauerkraut as this soggy, salty raw stuff on hot dogs,” Travins said. The difference between the canned products and his fresh products are akin to the difference between canned and fresh peaches, he said.

The kraut dovetails nicely with his career as a musician in the ragtime and blues band The Wiyos. The band sings a song called “Sauerkraut” and at gigs he finds that his sauerkraut often sells better than the band’s CDs. “It’s a good schtick to have,” he said.

Meanwhile, Hawthorne Valley Farm, his former employer, has grown its fermentation operation to become a separate, for-profit operation called Whitethorne. It recently moved into a 20,000 square foot plant in Hudson, Columbia County. "
