GENERAL STATEMENT OF DUTIES
Communicate well verbally. Write legibly and understandably. Inspect and care for perishable products. Clean and Organize work environment, incl. floors, dishes, equipment, etc. Cut and clean seafood. Receive and Stock inventory. Operate equipment: digital and manual scales, cash register, steamer, smoker, etc. Actively learn about seafood care and cooking. Suggestive selling. Prepare salads and ready-to-eat items. Lift 30 lbs independently and greater than 30 lbs with assistance.
SUPERVISION RECEIVED
Reports directly to the Retail Manager as tasks are completed.
SUPERVISION EXCERCISED
Directs employees with less experience on proper Ward's Seafood Procedures and shares general seafood knowledge.
MAJOR DUTIES AND THEIR DEFINITIONS (in order of importance)
1. Verbally Communicates in clear audible voice, free of jargon, with direct eye contact. Communicates in writing legibly and understandably according to Ward's Seafood Procedure, using the following forms: Retail Order Form, Kitchen Order Form, Shipping Order Form, Call When In Cards, Phone Messages, etc.
2. Independently reads, interprets, and fills verbal or written customer orders correctly and according to Ward's Seafood Procedure.
3. Accurately Operate and Document weights obtained using the digital and manual scales. Mathematically able to understand and document tare weights. Operates register accurately. Operates all equipment according to Safety Procedures.
4. Independently maintains standard of organization and cleanliness as dictated by Ward's Seafood Procedures. Independently Completes duties as they are assigned by management including setup, restock and cleanup.
5. Cuts whole fish of differing species and size within Yields as specified by Ward's Seafood Management. This includes scaling, heading, gutting, gilling, loining, fileting, steaking, butterflying, deboning and portioning. Independently and accurately calculates and records yields. Shuck, Crack, Clean, Peel, De-vein and Butterfly Shellfish.
6. Inspects all seafood product for freshness continuously using sight, smell, touch, and taste (when appropriate) according to Ward's Seafood Policy.
7. Receive and stock inventory independently as assigned by management. Required to properly lift up to 30 lbs independently. Required to lift greater than 30lbs with assistance.
8. Actively participates in ongoing learning/teaching process by asking questions.
Recipe for the day, by request:
Recipe for the day: Blue Crab Portobello
Ingredients:
1/3 cup mayonnaise
1 egg
2 tablespoons milk
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
2 dashes hot pepper sauce
1/4 teaspoon pepper
1/8 teaspoon paprika
1 pound blue crab meat, drained, shell pieces removed
2 tablespoons cracker meal
12 fresh portobello mushrooms, 2-3 inch diameter
2 tablespoons prepared Italian dressing

Directions:
Preheat oven to 375 degrees F.
Combine first 8 ingredients in a medium bowl.
Gently fold in crabmeat and cracker meal.
Remove mushroom stems; brush caps with Italian dressing and place in a baking pan stem-side up.
Fill mushrooms with crab mixture and sprinkle with paprika.
Bake for 10 to 12 minutes or until crab meat begins to brown.
