So last night I wanted to do something a little different. This is a little more time consuming than I would normally do on a week night, but well worth it. It takes about 10 minutes of prep time and about 40 minutes to cook it all.
The prep is the key here, have everything ready and it will speed up the process. I should have taken pics of the prep process, but here it is. Have three bowls ready for the beef, chicken, and the veg. Cut and season each individually, this will help develop the flavors as you add them. I seasoned everything with salt, pepper, smoked paprika, garlic powder, and some oregano. Have the juice of half a lime, some white wine, and beef stock ready as well. Open a can of refried beans and have them ready too!
You are going to need a deep sauté pan or pot for this.
I used 1 9oz sirloin, 1 small chicken breast, and some chorizo for the proteins. The veg was a mixed of about half a cup of diced yellow onion, a little cilantro, and some diced sweet red and yellow peppers. 1 can of refried beans, about 1/3 cup of beef stock, and about 1/4 cup of white wine. Some lime wedges, some cilantro, and sour cream at the end for garnish.
Place your pot on the burner over a med heat and add the chorizo. Let this cook slowly and let the juices' render out. This will be your base for everything along the way. After some of the juice has rendered add in the beef and cook until almost done. Remove the beef, and add the chicken. Repeat with the chicken, cook almost till done and remove.
By now your going to have some of that chorizo and protein sticking to the bottom of your dish. Deglaze with the white wine and add the veg in. Add the juice from 1/2 a lime. Mix well, scrapping the bottom to get the additional flavor out. Cook this mix for 3-4 minutes to let the wine cook off. Now add the refried beans and beef stock. Mix well. Once that is warmed add the beef and chicken back in. Mix everything well and cover for about 5-7 minutes. This will allow the beef and chicken to finish cooking.
Add the garnishes. Serve with warm tortillas and enjoy. This will taste like it has been cooking all day!
