Something new is coming. 🍞

Often times during my classes I hear people ask about other sourdough recipes centered around "sourdough discard"

I've been working on an answer to that!

Sourdough 201 is coming November 14th specifically for those who have taken our 101 class or have worked with sourdough. It's a shorter, more relaxed class built around sourdough discard recipes, the kind of things that come together faster, feel a little more everyday, and honestly might become your new favorites!

More details will come. But if you've already taken a 101 class or you've been baking sourdough at home, keep an eye out. This one's for you!

Sourdough 101 – July 11th 🍞

Here's what your class day actually looks like:

You walk in and your kit is already laid out at the counter; everything you need, ready to go. There's a spread of appetizers to snack on throughout the class because two and a half hours goes fast when you're actually learning something.

Within the first few minutes your hands are in dough. We mix, fold, and work through the process together. There's plenty of time to slow down, go deep on the details, and ask every question you've been sitting on.

Here's the part I love most: I bring in a dough I prepped the night before so you can watch a real loaf score, go into the oven, and come out right in front of you. No guessing what "done" looks like. You see it happen.

By the end of class your dough is resting and ready to bake the next morning! and you'll already know exactly what to do because we walked through every step together.

You don't just leave with dough. You leave knowing how to bake it.

One of the common things I hear after a class: 'I think I killed my starter.'
You probably didn't!
Here's how to tell if your starter is just hungry vs. actually gone:
Hungry starter:

• Bubbles have deflated or disappeared
• Top looks flat or sunken
• A gray or brown liquid has formed on top (this is called h***h)
• Smells sharp, like vinegar or alcohol

That's not a dead starter. That's a starter asking to be fed.
Give it fresh flour and water, keep it somewhere warm (75–78°F is the sweet spot), and check back in 4–6 hours. You'll likely see it double, dome up, and fill with small even bubbles, almost like melted marshmallows.

That means it's happy!

Your starter communicates through movement, smell, and texture. The more time you spend with it, the easier it becomes to know what it needs.

Any starter questions? Drop them below 👇 I'll answer them!
