After the sudden passing of her father, Illaria Bellotti took the helm of Cascina degli Ulivi in Piedmont, an estate that “produces not only wine but also cereals, vegetables, and livestock, embodying a holistic approach to farming and life” (). Stefano Belloti’s approach to farming was about holistic health and he passed this onto IIlaria. Their systems and methods - like radical non-intervention - have duly placed them on the map of vineyards making a mark. We’re excited and thankful to share the estate’s wines at Abundance next week, come share some with us?

Alessandra Alessandria, Gianfranco’s daughter, is the fourth generation and is credited to have pioneered sustainable practices in the vineyard. Taste this week some fresh red cherry, dried rose, violets. It’s an elegant, serious red - and is lovely lightly chilled. From Piedmont, Italy, the grape is 100% Nebbiolo. We think it pairs perfectly with a dish like our Dan Dan noodles.
