Now that the spring chicken season has wrapped up, here’s a little recap of how it went!

We faced two major cold fronts with freezing temps, some heavy rains and a whole lot of pasture planning and p**p scooping while they were in the brooder.

It’s hard work and our prices reflect the quality of a bird raised on pasture with no hormones, no antibiotics, no vaccinations and no medicated feed.

As members of we uphold the standards of how these birds are raised, processed and treated throughout their lifespan.

Big thank you to for the chicks being delivered healthy and their crew for the timely deliveries and communication.

Shoutout to MACI Feed & Supply for always ensuring we have a steady supply of the unmedicated feed thst the birds have access to as they grow!

Our inventory is on our website, and we regularly attend and with our other products as well as chicken.

We won’t raise meat birds until the fall, when the weather starts getting cooler. The cornishes don’t do well in Texas summer heat.

As farmers, we often focus a lot on our customers and community, which includes other farmers!

Show up to on Saturdays and help support our hard working local producers.

We’ll be there for poultry and spices but there’s so much more to explore out there!

Stay safe and warm with the arctic blast and Don’t forget to stock up on some food from on Saturday!

I will be here with the chicks making sure the brooder temps are consistent throughout the weekend but the family will still be vending a large selection of shelf stable herbs, spices, and teas.

Also “stock” up on the broth packs to have warm soup through the front!

It’s cold outside, and we don’t like to waste anything here at the Little Thicket, so while we cozy up we’re making do with what we have to offer.

We’re currently sold out of all our boneless cuts BUT still have chicken frames, saddles, and feet that make a really rich and delicious chicken broth.

For the ease of letting whole spices simmer in the broth, we made a pre mixed and measured spice pack!

Building a Home, Step by Step

We had never lived in a mobile home before and learned the entire process; from purchase to delivery, setup, and utility connections. Once the house was placed atop a concrete pad and utilities were connected, we finally had shelter. (Pic 1)

Heavy rains made even reaching the house difficult, and the temporary stairs were unsafe and impractical. To truly make the home livable, we built both a front and back porch, with a paver path providing safer access for daily life. These porches became places to pause, observe the land, and feel at home. (Pic 2)

Setbacks and Community

Access remained a challenge. Our road, damaged by trenching for utilities, became nearly impassable. A generous neighbor helped us restore it with their tractor in exchange for hickory wood for their smokehouse, an early example of the community spirit that continues to surround the farm.

Then came one of our lowest moments. During a time meant for planting, our home was burglarized and all farm equipment was stolen. It was deeply discouraging, and we considered giving up.

What kept us going was the community that showed up; by placing pre-orders, offering encouragement, and reminding us why we started. The support turned a moment of loss into renewed commitment.

Restoring the Land

Five acres of dense thicket were under-brushed to create natural mulch, and allow sunlight to reach the soil. Native grasses emerged, and invasive species removed as they showed up. What was once an overgrown thicket slowly began to breathe again. (pic 3)

Our Values and Vision

We are not a family of cowboy hats or boots. We are learners, listeners, and caretakers willing to work with the soil and grow alongside it (Pic 4). Our focus is on native plants, healthy ecosystems, and sustainable food production.

Our long-term goal is to dedicate at least one acre of Little Thicket Farm to growing food for those in need, and continuing to support and give back to our community in every way we can.

The farm is a story of persistence, humility and shared effort. We are deeply grateful for everyone who has helped along the way, and look forward to sharing our progress with you!

About us:

Little Thicket Farm began in June 2023 with a leap of faith and a deep respect for the land. We purchased a heavily wooded property that had once been used for logging and recreational hunting, then gone unmanaged for nearly 20 years. (Pic 1)

Hidden within the pine stands and hardwood trees was a small oxbow pond that never dried up, even during severe droughts when many surrounding ponds disappeared. That pond, teaming with life and resilience, inspired us. We saw the potential for sustainability, restoration and the community. (Pic 2)

Learning to Live on the Land:

At first, our visits were simple; weekends spent on folding chairs with sandwiches, dreaming about what the land could become and chipping away at whatever projects we could. During a school break, we stayed nearby for a week and realized that meaningful stewardship required presence. To care for livestock, manage the land, and build what we had envisioned, we needed to live on the property.

Our first steps were focused on access and stewardship. Because the property faces a state highway, we worked with the county to install a culvert, followed by fencing and gates to establish clear boundaries. From there, we began restoring the land itself.

This land had no electricity, no running water, and no infrastructure other than broken deer stands in the overgrown forest. Everything we took for granted elsewhere had to be learned from scratch. Electricity required a concrete pad before the utility company could even provide a quote. Trenches were dug, soil was disturbed, and eventually, power was connected.

Water brought its own challenges. A prolonged drought and material shortages placed us on a long waiting list for a well. While waiting, we installed a septic system, learning yet another unfamiliar process. The septic tank required water to be filled, and once again, the pond sustained us. When the well installation finally began, heavy rains delayed progress and further altered the land’s topography and reminded us why patience matters. (Pic 3)
