Sunday prep.
Usually it starts with some baking—keto bread, blood-glucose-friendly muffins, almond milk, and sometimes homemade nut butter or soaked and dried nuts.
This week: toasted pumpkin seeds with salt, pepper, cayenne, and olive oil—perfect for amping up salads and soups. A reminder that every bowl needs a little crunch.
Then it’s organizing all the supplements for the three of us and the multiple meds that help manage Paul’s immunosuppression post-transplant.
There’s simply no way this would happen during the week, which is why these Sunday habits are a must.
