Many of you are likely familiar with Hummingbird, our cow’s milk robiola style cheese that we make year round. This is how they look on day one— fresh little salted wheels on their way down to the caves. This batch in particular is golden to the eye because it was made with milk from the cows grazing on the rich spring flush.

Hummingbird received a special opportunity this year to be served at the PGA TOUR, thanks to Anne over at Third Wheel Cheese. Our head cheesemaker made Hummingbird back in April to have ready by the tournament mid-May. Every piece was hand wrapped by our affineur and then packed into boxes and delivered to the tournament out in Newtown Square. We are so proud to see Hummingbird fly to new heights and thankful for the opportunity to have our cheese in new spaces!

Cheese comes in so many shapes, sizes, textures, smells, and tastes (arguably the best part 😋) which change throughout its lifespan.

We are a small-batch artisan creamery but we work hard to provide our customers with a range of styles throughout the year to showcase terroir, seasonality of the milk, and the breadth of what cheese can be.

Starting from the grass the animals graze on, pasture management, animal welfare, and hygienic practices, these elements all contribute to creating high quality milk for high quality cheese.
