This morning marks the official end of our triple milk season! Our herds team dried off the sheep and they’re ready to rest until Spring. Any seasonal soft cheeses of ours that you see at your local cheese shop or store the next few weeks will be the last until next year. Our seasonal hard cheeses will be released throughout the year as they age. Thank you for another wonderful season 🐄 🐐 🐑

It is not entirely unsurprising that we’ve been asked if photos from the farm are AI. They’re not, and it could never truly replicate what makes this place so beautiful: the natural environment combined with the hard work and creativity of our team at Doe Run.

We are excited to introduce Batch #57 — a triple milk Reblochon style cheese inspired by our beloved English Cream recipe!

This cheese receives three washes in Spon Sidra II, a fermented cider made by our friends at S•U•C•C•E•S•S•I•O•N who helped us pick the apples from right here on the farm last September.

Batch #57 is a stunner as it ages. After the washes it becomes a lovely orange hue reminiscent of a sunset. It takes about another week to develop the light bloomy rind, lending to a softer pink color.

You’ll want to try this one. Limited batches while we are still have our goat and sheep milk.
