Finishing up on the last 20 # of Wagyu 🐮 fat and looking forward to seeing it turn a beautiful gold tallow. The first batch of 20 # yielded 14 pints and two pie dishes 🥴(those will be chamber vacuumed and kept in the freezer) 🥶
Didn’t want to use up all my pint jars. Hopefully, we’ll be able to get another 20-25 # of jalapeño peppers for cowboy candy 🥳

Sooo, 💯 pounds of potatoes 🥔 later, we have 10 pints of hash browns, 19 pints of French fries, and 35 quarts of rough cut 🥰
We dry-canned everything. So easy to do. The process we us is call Rebel Canning because it is not approved by the FDA 🤫
Dale loves the rough cut. The French fries and hash browns are new to the farm this year. Absolutely delicious.

Yesterday was a busy day.
After a delightful morning having a bone scan, mammogram, and purchasing 20 gallons of exterior paint 😵‍💫, came home and processed 37 pounds of potatoes 🥔 and ended up with 35 quarts.

Update on the homemade ketchup.
We willl never go back to store bought.
We used 20 of tomatoes at .80 per pound. A pint (8oz) cost $3.55 of pure ingredients. I can pronounce everything in our ketchup. We will definitely do it again. Ended with 4.5 pint jars. Didn’t include the half jar. So actually less than $3+ each. Homemade 1 - Store bought 🤮
