Bacon Loaded Potato Salad

Ingredients:
3 lbs. russet potatoes, peeled and cubed
1 teaspoon salt (for boiling potatoes)
1 cup sour cream
1/2 cup mayonnaise
1 Tablespoon Dijon mustard (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices bacon, cooked and crumbled
1 1/2 cups shredded Cheddar cheese
3-4 stalks of chopped green onions

Directions:
Place the cubed potatoes in a large pot and cover them with cold water.
Add 1 teaspoon of salt to the water.
Bring to a boil over medium-high heat and cook for 10-12 minutes, or until the potatoes are fork-tender.
Drain and let the potatoes cool completely.
In a large mixing bowl, combine the sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
Whisk until smooth and well combined.
Add the cooled potatoes to the bowl with the dressing.
Gently toss to coat the potatoes evenly.
Fold in the crumbled bacon, shredded Cheddar cheese, and chopped green onions, reserving a small amount of each for garnish.
Cover the potato salad and refrigerate for at least 2 hours.

As much as I like another brand I no longer buy because it has MSG in it. Read mixes and you'll find most do. I know Walmart carries one brand that doesn't but can't remember the name. Will need to check next time I must go there which isn't often.
