Getting closer to Saucy Beard BBQ’s first New England pop-up at Hilltop Fireworks in Somersworth next month and I’m fired up for this one.

There’s been a ton of work behind the scenes figuring out all the little details that go into doing something like this right, and making sure nothing important gets overlooked once it’s time to start serving.

Brisket.
Pulled pork.
Ribs.
Loaded mac.

Saucy Beard BBQ is officially kicking off our first food event at Hilltop Fireworks in Somersworth.
We’ll be out there serving slow smoked BBQ, loaded mac bowls, brisket, pulled pork, cold drinks, giveaways, free samples while they last, and more.
If you’re already heading to Hilltop for fireworks, stop by and grab some food while you’re there.

What's up y'all! Sorry for the hiatus but I promise, we're still here! Just wanted to pop in and give an update on everything! Part 2 of 3 of the cross-country move is complete. Back in Maine for a few weeks and then I'll be headed back to Colorado one last time to finalize everything there and get my last load. As for Saucy Beard BBQ, plans are still in place to have a couple pop up events this summer. We are still working towards a full mobile trailer setup but that will likely take more time. With that said, our first event will be happening at Hilltop Fireworks as planned. Part of food BBQ is the sides. We have traditional sides (potato salad, coleslaw and smoked mac n cheese) and two additional options (peachy bbq beans, and green chile cream corn). I just remembered a pasta salad recipe that I came up with a few years back that is a great summer pasta salad and goes well with BBQ. It is a street corn pasta salad with a twist. I would love to have this on the menu but I don't want to overcrowd the options. My thought would be to replace either the potato salad or the coleslaw. I believe the potato salad would be the best option here but want to get your feedback! Let me know what you think!

Tried to post this in some local groups. Hopefully some of you in the New England area can help me out since my posts are declined in those pages.

Looking to get some input from those in the local food scene. I’ve been working on laying the groundwork for the Saucy Beard BBQ food trailer so when I pull the trigger, everything goes nice and smooth and I can get to serving up some great food to you all, quickly. Right now I’m working through suppliers for meats and bulk ingredients.
I’ve been looking into Favorite Foods and I'd like to hear input on them.
How are they on pricing, quality, consistency, reliability etc.
If there’s another supplier you’d recommend for brisket, pork, chicken, bulk items, supplies etc. I do know about Restaurant Depot already.
My goal is to keep quality high while getting the best pricing I can so I can keep my menu prices as fair as possible when this trailer gets rolling.
Appreciate any input.

Lately I’ve been thinking a lot about how often people are actually going out to eat right now.

Between prices going up everywhere, groceries getting crazy, and everything in between… it feels like a lot of people have changed their habits.

So I’m curious…
How often are you going out these days? And when you do go out, what actually makes you decide it’s worth it? Is it the price, the quality, convenience, something different, or just not wanting to cook that night? Also, where does BBQ land for you?
Is that more of a once-in-a-while kind of meal, or something you’d grab more regularly if it was done right?

I know BBQ isn’t the cheapest option out there, that just comes with the territory, but I want to make sure what I’m building with Saucy Beard BBQ actually lines up with what people want.

I’m excited to bring Saucy Beard BBQ to New England and serve the food that started the sauces and seasonings.

We’ve been working on something a little different behind the scenes, and it’s not going anywhere.

As we’ve been working out the menu for the food trailer, one thing became pretty clear.

We needed a seasoning built specifically for chicken.

Something that brings that classic rotisserie flavor everyone loves, but still hits with that Saucy Beard vibe.

One thing you’ll notice when Saucy Beard starts serving food…

We don’t cut corners.

There’s a difference between BBQ that fills a plate and BBQ people actually remember.

It comes down to consistency, attention to detail, and doing things the right way every single time.

That’s the standard I’ve built this brand on, and it’s the same standard coming to your plate when you place that order.

There’s a lot of BBQ out there.

Not all of it is good.

When Saucy Beard starts serving, the goal isn’t just to put food on a plate. It’s to put out BBQ that people go out of their way to come back for.

That’s the difference.

Good morning and happy Wednesday! I just wanted to pop in and show you all some of the trailer options I'm considering and go over the budget of these. I would also love to get feedback from you all. You are the ones that are backing this after all. I will get a little personal and open up a little at the end of this post as well.

I know $35k seems like a lot (this is the goal of the funding campaign), but that's where I want to come and explain. There are a lot of requirements for a food truck/trailer besides the obvious things. Some of those include non porous walls and non slip flooring. 3 bay wash sinks and a separate hand sink (these of course then require a full water system to include water holding tank, gray water tank, water heater etc.). The rear deck on these trailers is to house the smokers ( this will keep from having to purchase very expensive interior use smokers as well as keep the heat from the smokers outside.). This is just part of it. When you look at bare bones trailers for $8-12k, there's a ton of work and materials that need to go into them to get them food and health safety approved. Not to mention the appliances and various things that would be needed. With that said, these are some of the options on the more affordable end of the budget.

Now, about the funding campaign. I appreciate all of you with the willingness to back me on this venture. Even those that don't even know me. I pop up in a new town, make a couple posts and then start asking for support. Aside from that, the amount of excitement and welcoming I received on the introduction posts was amazing. So many of you were happy and excited for a new BBQ option in your area. I hope all that excitement sticks around. This is certainly going to be a process to get a trailer procured, outfitted, and a stamp of approval from Maine and New Hampshire. This will happen, even if it's ultimately not funded by this campaign. I am not looking for handouts on this project, and I am not afraid to work for it. I tried to make options that gave back to those supporting the project. Things such as meals, discount perks, merch that you can be happy to wear. This campaign was to help streamline and fast track the trailer option and be prepared for the summer fun. With the move out from Colorado, preparing a home sale out there, a home purchase here in Maine soon, and moving 3 businesses out, the planning and ex*****on of this new venture has to be strategic and carefully planned. You all have already been very supportive and for that, I am very grateful. I look forward to serving you all with some delicious food! Even if I had zero backers on this campaign, you all have already shown that this needs to happen and it will. Even if we don't make it happen by summer, we will still be doing private events as well as serving you all leading up to the 4th of July at Hilltop Fireworks. So at the very least, you can expect to see us then!
