What is modern Filipino food?

It is ever changing and taking shape through many hands in kitchens all over the world.

To paraphrase the words of chef Amy Besa of the great Purple Yam restaurant; Filipinos are resourceful and will use the ingredients they are surrounded by and interpret those ingredients through their “Filipino” palate.

This mushroom adobo quesadilla is wrapped up in all the vibrant local ingredients we are surrounded by. Juicy Palisade peaches 🍑, incredible heirloom tomatoes 🍅, smoked Oaxaca style cheese 🧀.
