What can I plant when it is still cool outside? 🌱
Cool season crops germinate in cold soil and mature with shorter periods of daylight and cooler temperatures. These crops thrive in cooler temperatures making them perfect for spring planting! When the weather gets hot, these crops will likely go to seed and can be pulled out to make room for summer crops.
When planting your garden, it is important to know what to grow and when to grow it. Here in New Jersey we can plant cool season crops twice! Once in spring, and again in autumn. Cool season crops include most of our root vegetables and leafy greens including, carrots, radishes, turnips, beets, spinach, collards, Swiss chard, arugula, cabbage, cauliflower, broccoli, potatoes, kohlrabi, peas, onions and garlic. We like to grow our crops indoors six to eight weeks before the last frost date, which is approximately April 15th here in zone 7. Be careful of cold snaps that may put your seedlings in danger of frost damage.
