I tend to romanticize barbecue, probably more than most. Mostly because it’s one of the few things I ended up being halfway good at, so it holds a different place in my life than a lot of my other passions.
Because of that, I felt compelled to make a long-form video diving into my ethos around wood as both fuel and flavor. It’s on YouTube if you want to check it out. In the video I explain why I believe wood is the most overlooked seasoning in barbecue.
Over the years, many of us got excited about new pits, seasoning blends, butcher paper vs foil, beef tallow, meat quality, and all the other details that come with modern barbecue. Somewhere along the way, I think we started losing touch with the heart and soul of what barbecue is really about. Or at least I did. So I made this video as a way to ground myself back in the foundations of this craft.
Good barbecue starts with quality fuel.
Whether you source it yourself or have the luxury of buying from a wood purveyor, one fact still remains. Without firewood we have nothing.

But lately I’ve felt called to make the kind of content I wish existed when I first got into this barbecue thing. Yeah, it might come at the expense of virality, but I know it means something to the people it’s meant to reach.
