The first real meal I made using the toaster oven function on my air fryer toaster oven — a sausage and pepperoni layered pizza bake! 🍕

The recipe called for either Carb Balance tortillas or Folio cheese wraps, and I went with the Carb Balance tortillas. I also added bacon, mushrooms, and olives, which are some of my favorite pizza toppings.

It’s similar to the pizza bowl recipe I’ve shared before, but this version uses the tortillas as a layered “crust” with all the toppings stacked in between. Super filling, super flavorful, and definitely happening again.

Here’s What’s in My Lunchbox this week! 🍱
I wanted to start sharing what I pack from time to time to give you some simple ideas for fueling your body during the workweek.

Here’s what I bring to keep me going:

🥒 Morning Snack:
   •   Half of a sliced cucumber
   •   2 slices of hard salami
   •   2 slices of pepperoni
   •   2 cheese sticks

🍽️ Lunch:
   •   My pork loin + veggie meal prep from my previous post

🥚 Afternoon Snack:
   •   One hard-boiled egg. Nothing fancy—just quick stuff that works for me. I’ll share more lunchbox ideas whenever I switch things up. 👍

A good ol’ Sunday reset to get ready for the week — especially after being blessed to celebrate my upcoming birthday with family this weekend! 🎉💛

Kicking off the first week of year 31 with a simple, clean lunch prep:

🥩 Smithfield pork loin seasoned with Grill Mates Sweet & Smoky rub
🥦 Roasted veggies (the $5 stir-fry packs from Safeway!) tossed in avocado oil, salt, pepper, and a little jarlic

Perfect for meal prep.

It’s been a minute since I’ve posted! This weekend, I had the opportunity to attend the Washington Association For Foreign Language Teaching Conference in Spokane Valley. It was such a wonderful experience, and I’m excited to bring some of the new strategies and tools I learned back into my classroom.

I made it home just in time to knock out my weekly meal prep. This week I went with keto eggroll bowls, one of my favorites! I finished just in time to sit down and watch Game 6 of the ALCS: Mariners vs. Blue Jays.

This year I’m challenging myself to get more creative with meal prep. For week one, I kept it simple but tasty—ham, cheddar/swiss cheese, and pickle roll-ups with a side of crisp green peppers and cucumbers. 🥒🫑

Easy dinner!

I have time to prepare dinner without that urge to grab a bag of chips or whatever.
1). Smoked Turkey breast
2). Pickles
3.) Pepperoni (crisped in the microwave because it removes a lot of the oil and it becomes crunchy)
4.) pistachios (or any nuts)
5) cheeses
6) cheese crisps (again removes some of the oil and gives you some crunch).

Sunday Reset ✨
After being away from my apartment most of the summer, it was definitely time for a good reset before the school year starts. Laundry , deep cleaning , and the dreaded Walmart run —all to stock an empty fridge with fresh ingredients for clean eating this week.
Starting the week off right always feels good.

My goal this summer has been to find fun, easy, and healthy recipes I can make during the school year—especially for those nights when the classic “meat and veggies” dinner starts to feel boring.
Tonight’s recipe: a keto crustless pizza bowl paired with a fresh salad. 🍕🥗

This TikTok recipe called for a bowl, but I used an 8x3.75in foil loaf pan instead. My toppings were mozzarella, pepperoni, hot Italian sausage, mushrooms, orange bell peppers, and black olives.

Pro tip: don’t get too excited with the sauce like I did—it came out extra saucy! 🤣 Check out the two videos I used if you want to follow along.

What I eat Wednesday: I made this ground beef zucchini bake a few weeks ago and wanted to try it again! This time instead of ground beef I used hot Italian sausage. I also forgot the mushrooms and did not have Italian seasoning… oops! 🤣🤷‍♂️It was still good though! Give it a try and let me know what you think!
