I got a batch of HUGE scallions from my weekly farm share, so what is a girl to do?? Make grilled scallion pancakes!! These are very simple to make and the best part is your kitchen doesn’t get covered in oil when you make them on the grill! Here’s the recipe:

Ingredients:
Pancakes
- 2 cups flour
- 1 cup boiling water
- About 1/4 cup sesame oil
- 2 cups thinly sliced scallions
Sauce
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1/2 tsp thinly sliced fresh ginger
- 1 tbsp thinly sliced scallions
- 2 tsp sugar

Directions:
1. Add the flour to the bowl of a food processor.
2. With the processor on, slowly add the boiling water until a sticky dough forms.
3. Turn the dough out onto a floured surface and need a few times into a ball.
4. Place the dough ball in a bowl and cover with plastic wrap. Let it sit at room temperature for about 30 minutes.
5. While the dough is resting, in a small bowl, mix together all sauce ingredients and set aside.
6. After the 30 min, split the dough into 4 equal parts.
7. On a floured surface, roll out one of the parts into about an 8 inch circle.
8. Brush lightly with sesame oil and roll into a log.
9. Spiral the log into a circle and tuck the ends underneath. Then roll out into an 8 inch circle again.
10. Brush with more sesame oil and spread 1/4 of the scallions on the dough. Roll into a log and the spiral log into a circle again.
11. Roll the dough to about a 7 inch circle. Place the finished pancake on a plate lined with aluminum foil or parchment paper and brush the top lightly with sesame oil again. Repeat the same steps for the other 3 parts.
12. Preheat 2 grates on 1 side of your grill to high to create indirect heat on the opposite side of the grill.
13. Lightly oil your grates to prevent sticking.
14. Gently lay the pancakes down on the indirect heat side of the grill and close the lid.
15. Check on the pancakes regularly to avoid burning. Once you start to see grill marks and the pancakes starts to firm up, flip to the other side.
16. Remove the finished pancakes from the grill to a plate and cover with a towel to keep warm while you finish grilling the others.
17. Cut or rip into pieces, dip in your sauce, and enjoy

An ode to the first trimester, but it gets progressively more sad the more you scroll🤪 Pretty hard to run a food page when you suddenly hate food lol. The real MVPs were blueberry bars and cinnamon swirl toast!! I am so grateful to be able to carry this baby, but the first trimester SUCKED

Orange marmalade grilled chicken!🍊🍗This was my first time grilling with charcoal on my Charbroil Pro Series 3 in 1 grill and it was definitely a success! The charcoal was super easy to light and I was able to maintain indirect heat to get a perfectly juicy chicken! This is a great recipe for a small dinner party! Here’s the recipe:

Ingredients:
- 4-5 pound spatchcocked whole chicken (aka backbone removed)
- 1-2 tbsp olive oil
Rub:
- 1tsp garlic powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp ground black pepper
Glaze:
- 1 cup orange marmalade
- 2 tbsp soy sauce
- 2 tsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp brown sugar

Directions:
1. About 3 hours before you plan on grilling, place the chicken on a wire rack on a sheet pan and use paper towels to pat it dry all over. Sprinkle all over with salt and let it sit uncovered in the fridge until ready to grill.
2. Preheat your charcoal grill to have a direct and indirect heat side. You want the temp to be around 400 degrees.
3. While the grill is preheating, mix together all the rub ingredients. Coat the chicken with olive oil and then cover completely with the spice rub.
4. Place the chicken breast side up on the indirect heat side of the grill. Close the lid and cook for about 20 minutes.
5. While the chicken is cooking, use your side burner or stove to prepare the glaze. In a small saucepan, combine all glaze ingredients and bring to a simmer for about 3 minutes. Turn off the heat and cover until ready to use.
6. After the 20 min, baste the chicken with about 1/3 of the glaze. Close the lid and cook for another 20 min.
7. Move the chicken to the direct heat side of the grill and flip so the breast side is down. Baste the chicken with another 1/3 of the glaze and close the lid and cook for another 5 minutes or until the breast reaches a temp of 160 degrees.
8. Flip the chicken to breast side up again and add the remainder of the glaze on top.
9. Remove the chicken from the grill to a cutting board and allow it to rest for 10-15 minutes.
10. Carve into pieces and serve with whatever sides you’d like. Enjoy!
