Start to finish, I couldn't be happier with the results from this cook. Leave these other brands of charcoal alone. One chimney of B&B Charcoal lasted 2 hrs & 300° & was still going strong after I removed all the food.

Exactly 24hrs later!! People just don't realized how much hard work & time goes into a good brisket. They are $28-$32 a lb for a reason.

My offset grate held up long enough to put them past the stall

I've heard so much about these char-logs but never tried them. After dry brining these prime briskets for 16 hrs, I fired up the offset & now the B&B Charcoal are do their thing.

B&B Charcoal & I are at it again! This time its the char-logs fueling the offset smoker to create my version of a Texas Brisket.

Costco came through with these prime briskets. Now it's time to trim & season these babies for my cook tomorrow.
