Washed, natural, or honey? You’ve probably seen these words on a coffee bag before. But what do they actually mean?

Processing is one of the many decisions made long before coffee reaches your cup, and it can influence everything from how the coffee is roasted to the flavors, sweetness, acidity, and body you experience.

None of these methods is necessarily better than another. They simply create different possibilities for the coffee.

So next time you’re choosing a bag, take a look at the process. Understanding a little more about how your coffee got there might help you understand what you enjoy in your cup, too.

Switching to a lighter roast? Don’t be surprised if your shots suddenly taste sour and your grinder starts working overtime.

Lighter-roasted coffee is denser and harder, so your grinder has to work harder to break it down. Darker roasts, on the other hand, are more porous and brittle, making them easier to grind.

That difference can also change how your espresso extracts. A lighter roast generally needs a little more help to extract properly. Using the same recipe you used for a darker coffee can leave you with an under-extracted, sour shot.

It doesn’t necessarily mean something is wrong with your grinder—or your coffee. You may just need to adjust your grind and extraction.

Different coffee. Different behavior. Different recipe.

The more you understand your coffee, the better you understand the tools you use to brew it.

In a world of disconnect and superficial connection, soulful coffee is here to do the opposite.

So, why is specialty coffee more expensive? It’s not, you are simply paying for what wasn’t sacrificed to make it cheaper…

More intention at origin. More care for the land. More respect for the producer. More transparency throughout the journey. And more responsibility on our end as roasters to honor all of that work once the coffee reaches us.

When you pay more for specialty coffee, you’re not simply paying a premium for what’s inside the cup. You’re choosing to support a coffee chain where land, people, quality, and relationships matter.

Specialty coffee should feel meaningful, not intimidating.

Sometimes the words on a coffee bag can feel confusing: acidity, body, process, traceability, single origin, roast date.

But these words are really just simple clues that help you understand your cup.

ACIDITY is the brightness in coffee, like the crispness of citrus or fruit.

BODY is how the coffee feels, light like tea or heavier like hot chocolate.

PROCESS tells us how the coffee fruit was handled before it became the green bean we roast.

TRACEABILITY means we can connect the coffee back to the people, farm, or region that made it possible.

SINGLE ORIGIN means the coffee comes from one place, not a blend of many.

ROAST DATE tells you how fresh the coffee is.

The more we understand the language, the more we understand the journey.

And when we understand the journey, the cup becomes soulful!
