Good evening, y'all! Geez, this weather! Two days ago freezing our butts off with less than 60 degrees and today I'm missing AC for the first time! 91 outside! I put Antonio outside to see if he's getting active in the heat, but maybe I did it too late, there's not much happening. And this is already the second shot! Well, but I've been busy all day looking for stores that can deliver what I will need to the food truck, because I don't have a car! The biggest problem is finding ice that doesn't ruin my budget! I want those ice mills like in Texas! I need crushed ice for lemonade to serve and I found this cute ice chest on wheels that I thought could serve as a fridge for my beverages. It would look so cute next to the black trailer! But 50lbs of ice are around 50$! 2kg bags you can get at the gas station, but not 20kg which I would need for the 80qt ice chest.
But what I achieved today is test the cornbread mix and see if people could actually get a good result without cooking creamed corn. Another thing we don't have here. I was quite happy with the result! Then I made a chili spice blend, but that one's still cooking, I can't tell yet if it works. But it's a mixture of Laura's, mine and google's!😅 My last chili was so good, because I had this smoked chili powder, but also that is not available here and I don't want to use blends, I want to make my own blend. I have not signed a lease yet, but the support is 50% sure and I'm just acting like I had already signed the lease so I have my products ready once I get to do that. And if he chooses somebody else I will have to go to plan B! But the products stay the same. Sorry for rambling, guys!

Hello, my dear friends! I wanted to show you these guys. They're red currants (rote Johannisbeeren) and I missed them soooo much in Texas! Their season is very short, only one to two months, but you can have them frozen all year long. Bakeries like to use them to top sheet cakes with meringue on top, they go on streusel yeast pastries, you can put them in your oatmeal or yogurt...I like to eat them from the stem. They're very tart, a lot of people can only eat them when they're dipped in sugar, but I love them just the way they are! They're also popular to have as bushes in your backyard so you can pick your own harvest. They do have a lot of seeds though, but I mean, raspberries do, too. It's not like we're chewing them that long.😅

Can you imagine how I freaked out when I found these today?! I went into a Turkish supermarket hoping to find black beans or pinto beans, but I found black-eyed peas and THESE instead! I can't wait to use those in sourdough or cornbread or scones! I also would love to find a butcher that can make me jalapeño cheese sausages. So I can turn them into Klobašnek or what they're called. At JB's we called them kolaches, but I know that was wrong. Germans will wonder about the name though, because that does not sound Texan at all, but like our neighbors here!😅 But I will explain to them that that is as Texan as the chili!

I woke up at 5:20 this morning and started the test baking. First batch: No fan at 350F, second batch 325 F with fan and the last one 350F with fan. The first one was the biggest, but the edges browned way too fast and I had to rotate them and for the last couple of minutes I put them in the highest rack, the other two I did not have to rotate and they came out with a prettier shape, but they're smaller. I have two more stting in the fridge, I want to try to bake them at 400F to see if they brown faster on top and remain moister inside. I don't want them raw and soft, but crunchy and moist.

Guys...I have this meeting tomorrow with the self-employment adviser and I have to present a 33 page long business plan and pictures of my product and it "wouldn't hurt if I brought a cookie" so they could also taste what I'm planning on selling. This converter has been sitting here for two weeks,but now I really needed my mixer so you're witnessing my very first use of this thing! Then I noticed earlier that my kitchen scale has not been found yet so I unpacked all the boxes in the attic, although every box had an exact inventory list. But in the end I found it and now at 8:36 I want to make my dough so I can bake them giant chocolate chip cookies tomorrow morning! Hoping the German ingredients will act like the American ones!

Alrighty, guys! Wish me luck! Yesterday I started reviving dehydrated Antonio! I want to make cinnamon rolls on Monday the latest so I can impress the people at the job center and convince them that Bremen needs those!😅 Also I would like to start baking bread for myself again and experiment with different flours that we have here.

And the day before that I drove to Greetsiel which is in east Frisia, on the German coast. It has a tiny port and very cute houses, too. Tourists come here all year to drink the specialty, Friesentee, a nice black tea with heavy cream and big chunks of rock sugar. The weather was not very summer like, but, well, that’s Germany. Cold and rainy in June. It can be warm, but it also can be very rainy. July and August are usually the warmest months. But the rainy weather always gives nice clouds!

Hello, my friends! Yesterday I visited Bremen’s Schnoor quarter, I need to share this, because it is a very huge tourist attraction. The streets are so narrow at some places I had to walk sideways!😅 But the reason I went there is quite exciting: I went to meet with somebody who’s renting out a food truck! My brain rattled all afternoon thinking of how to make my Texas delicacies there and it’s not impossible! I just have to change the name and the logo and apply for some more support and hypothetically I could start very soon! So cross your fingers for me that everything works out in my favor! Hello, y’all! A little update from Germany: My container arrived last week on Monday, everything went very smoothly, I had a lot of help, unfortunately I also caught a really bad cold that I pulled through the last ten days, but we’ve been busy getting the kitchen set up which was the hardest part, and I’m still unpacking. The reason I’m not posting so much lately is that before June 15th I won’t have internet at my house and my cellular data is running through my fingers like sand! But I can tell you this much: I found my dehydrated Antonio and I can’t wait to test my Texas recipes with German ingredients! Once that happens I will definitely post more!
