New recipe, as promised. Dressing recipe will be in the next post!
This salad incorporates many of the traditional flavors of Thanksgiving and fall. Pomegranates, maple in the dressing, pepita's (pumpkin seeds), carrots, and the rotisserie chicken is reminiscent of Thanksgiving roasted turkey (my favorite is Publix Mojo flavor). The pepita salad topping I used also contains sunflower seeds and dried cranberries, which also complement the fall flavor profile. Also delicious with fresh blueberries on top.
You can make this salad any time and be transported to a cozy Thanksgiving dinner. 🦃
