I owe this to Heath Riles. I've followed him, I've talked to him and It's been a blessing to have someone like him and my wife in my corner. I've gotten tips from him on how to make my ribs better and it's an honor to give you what a 3 time world champion has given me. I haven't forgotten anything I'm just getting started with new style BBQ.

Memphis in May is coming up and I wish I could make it. Some things have came up in preventing me from going and talking with all my pitmaster buddies that I have became friends with last year. As you know I've been a Heath riles fan and supporter for several years now and I'll always root him on. Go Heath and keep doing your fine BBQ and have fun buddy. Maybe I'll have that chance one day to join in with your team and bring that money and championship home.

Just to throw it out there for some of you who don't understand trying to run a business with cooking BBQ. I've had people ask me why I don't do brisket. I'm a small business owner that opened up less than 2 years ago and I try my best to pack the best flavors to bring new taste to the public. I try to set prices accordingly. By the time I buy brisket and trim it down and smoke it the weight goes down which means to the consumer I would have to jack my price way up to make a profit and then I'm taking a chance of losing a lot of money. I stick to baby back ribs and other foods to try and make a profit and give you the best flavors I can give. When my business grows I'll put brisket out but until that happens I won't touch it. Just telling it real. Some pitmasters do fine jobs with brisket I'm just the guy who keeps it simple and trying to grow my business. Thank you for your support.

We will have sides this weekend to plus the baby backs! Mac and Cheese, Pit Beans, Slaw and Potato Salad need them orders in by 5. We got some orders already so we have a few spots available still for ribs!
