The squirrel’s cousin, Miguel came over today and fixed up sorta a 7 layer “dip”. OMG !!! Cream cheese, fresh jalapeños, corn, cheese, taco meat, Hormel type chilli, more cheese, topped with jalapeño diced & tomatoes. MmmmmMmmmmmmm

OH MY ‼️‼️ The squirrel stopped over again tonight. He was cold, so he stayed inside for about a 90 minute visit. He made “One pan chicken noodles” (recipe in comments). I had boneless chicken thighs in the house. He said “That’ll do”.
When he saw “Cream” in the recipe, he said “HELL YEAH!!”

Followed the recipe (mostly) but he put onions in while frying the chicken thighs. Then, he wanted to make sure the noodles were done. So, he boiled them for about 8 minutes instead of just using the one pan.
He likes corn and his spouse likes crushed red pepper, so those were added also. Anout 1 cup of corn and 1/2tsp of crushed red pepper

In order to get some of the flavor into the noodles, after combining the ingredients in his NEW 7”x11” baking dish, he covered it with foil and baked at 350 for about 45 minutes.

The finished product, OH MY ‼️ i have to give it 8 WOWS!! My only fault i found was the Squirrel is so damn impatient!! Just another 4-6 minutes of simmering may have thickened the sauce more. Other than that, the flavor was awesome!! Noodles were nice and tender.

Rating: 8 WOWS!!!

PSA: This is a Ceramic knife. I’m not sure if many know about ceramic knives. I bought one about 5 years ago. I love and prefer them over steel knives. They are VERY sharp. The only downfall is you have to be careful with them and always put them back in the guard. As far as I know they can’t be sharpened. If they get chipped, they don’t work as well.

Tonight’s creation was a Hash Brown, Egg, Sausage & Cheese breakfast casserole. I DID google a recipe so I can’t take all the credit! Once again, the Blind Squirrel found the nut!!! Mmmmmm. This turned out as good or better than my brain could imagine. Our homemade salsa definitely complimented it.
I’ve got leftovers that I know I’ll be warming up for breakfast.

Another thing that came to mind is chopping it up, throw it in a 10” tortilla and you e got breakfast burritos for on the go!!
