Soooo…. The squirrel has had Beef Enchiladas casserole on the brain for about 3 days!!!
There are 6 large enchiladas under all that cheese, gently laid on a bed of Spanish rice. Mmmmmmmm.
Top with a dollop of Daisy sour cream, and you are in heaven.
ABSOLUTELY NAILED IT!!

The squirrel whipped up his first ever, homemade, Salisbury Steak. He said he had seen a recipe but didn’t save it. He decided to “wing” it. O M G !!! NAILED IT!! From the first bite, brings back childhood memories! My first thought was Banquet Salisbury Steak NEVER tasted like that. (That good)

It’s been a minute. Yesterday…. Goulash popped into my head!! I emailed the squirrel, who said he couldn’t make it over until today. OH MY G !!! It was worth the wait.
Every once in awhile the first bite lights up my brain and says, THATS exactly what I was thinking!!! A real 10/10 !!!!

A shoutout to “Allrecipes”. I’ve never been disappointed using one of those recipes as a base. Of course I always customize mine. I mean the squirrel’s 😉.

Oh My G!!!! The squirrel stopped by! Had a new twist on the breakfast bake. Combined biscuits, sausage, bacon, eggs, cheese AND sausage gravy to go on top!

This one was a hit OUT of the park!!

SO flavorful in every bite!
